Red Velvet Cake Recipe

Serves 8 | Prep Time: 25 Minutes | Cook Time: 25 Minutes

Cake Ingredients:
1 1/2 cups (300 g) sugar
1 cup (240 g) unsalted butter, room temperature
4 tablespoons (60 mL) baking cocoa
1/2 teaspoon (2.5 mL) salt
1 1/4 teaspoons (6.25mL) baking soda
2 eggs
2 1/2 cups (300 g) cake flour
1 cup (240 mL) buttermilk
1 teaspoon (5 mL) vanilla extract
1 teaspoon (5 mL) red (no-taste) icing color

Frosting Ingredients:
1 8-ounce package (230 g) cream cheese, room temperature
1 cup (240 g) unsalted butter, room temperature
3 cups (300 g) powdered sugar
1 teaspoon (5 mL) clear vanilla extract

Method:
Preheat the oven to 350 degrees F. Coat 3 8-inch pans with nonstick spray; set aside.
To make the cake, beat the sugar and butter in a stand mixer until light and fluffy. On low speed, add the cocoa, salt, baking soda and eggs one at a time, making sure to scrape the bowl as need to mix thoroughly. Alternating, add the cake flour and buttermilk in thirds. Mix in the vanilla extract and icing color. Divide the batter evenly between the 3 pans, and bake for 25 minutes, or until a toothpick inserted into the middle comes out clean. Allow the pans to sit at room temperature until cool, remove the cakes from the pans and transfer to the freezer to chill for 30 minutes.
To make the frosting, add all the ingredients in a stand mixer and beat until smooth.
Remove the cakes from the freezer and cut the domed tops with a serrated knife, creating flat surfaces. Using an offset spatula, frost the cake.

Cook’s Note:
If red (no-taste) icing color is not available, using 1 ounce of red food coloring works well too.

MANGO CASABLANCA


I was browsing through a friend's blog and found this recipe that I'd like to try...so here is the recipe if you can to have a go at making them..thanks to Amie Kitchen for the recipe which i have copied and paste below..hers looks definitely better than mine..hahaha..

Bahan-bahan:
27 keping Biskut Cream Crakers
1 kg mangga masak ranum - kupas kulit dan hiris nipis ( i put fresh mangoes on top and put mango filling here)
250 gram Philadelphia Cream Cheese
2 tin (300gram setiap 1 tin) Nestle Cream
300ml Sweeted Cream - boleh gunakan sukatan sendiri untuk rasa manis yang dikehendaki
susu cair - pilihan
bekas persegi ukuiran 8" X 8" 

Cara:
1. Pukul Philadelphia Cream Cheese / Anchor Cream Cheese, Nestle Cream dan Sweeted Cream menggunakan mixer sehingga kembang.
2. Ambil satu senduk besar campuran krim di atas dan tuang  merata di bahagian dasar bekas persegi.
3. Susun 3X3  biskut berjumlah 9 keping.
4. Tuangkan satu senduk campuran krim dan sapu merata di atas susunan biskut.
5. Susun kepingan hirisan mangga di atasnya.
6. Tuangkan satu senduk lagi campuran krim dan sapu merata di atas susunan biskut.
7. Susun lagi 3X3  biskut sebanyak 9 keping.
8. Ulangi langkah 4, 5 dan 6 sehinggalah habis 27 keping biskut.
9. Tuangkan lebih sedikit campuran krim ke atas kepingan biskut yang terakhir.
9. Tutup bekas persegi tadi dan masukkan ke dalam peti sejuk. Sekiranya ingin dinikmati segera, bolehlah simpan di bahagian beku selama 1 jam tetapi sekiranya tidak untuk segera dimakan, bolehlah simpan di bahagian bawah sahaja sehingga sejuk.
10. Keluarkan bekas dari peti sejuk, dan potong untuk dinikmati.

Amie gunakan loose bottom cake pan, supaya lebih mudah untuk keluarkan Mango Casablanca sekiranya hendak dipotong.

AMIN'S 16TH BIRTHDAY CELEBRATION

Amin's birthday celebration has actually been planned as we always forget when it comes to the actual day..this time I bought Groupon's vouchers for Buffet Dim Sum at The Food Tree for all.
The food was plentiful for all of us and after a long spat of not eating out and these have been our favorite food which we can never eat unless we go to hotels or this kind of rest. Dim Sum is also tedious to make hahaha and also difficult to get lessons on them especially HALAL ones.I had one of the most satisfying lunch of this year.










 DINNER AT HOME
This was dinner on his actual birthday 10th September 2013..
Simple roast chicken, cauliflower and potato salad, roast chicken and mushroom soup.





 6 layer chocolate cake with caramel butter cream and covered with ganache topped with frozen raspberry

CREAM CRACKERS SALTED CARAMEL CHEESECAKE

Salam and a very good morning ..
It has been a while since I bake, make anything for the house. Busy with everyday life and also pursuing my other love - sewing.. 
Been browsing the net and found this recipe..it is easy but very tedious to make it..but end result yummmyy..
I decided to make it for Father's Day lunch at home..made a day ahead.
Give it a try, maybe use the original recipe portion because I make mine for my large family but keep the pan small so that u will have a tall cake..i like tall cakes..maybe a 7 x 7 pan for the original recipe will be good.. and for the layers in between, u can actually put whatever it is u like, maybe some nutty bits, choc chips, choc scrapings, even mars bars, M & Ms..etc

I used a 9 x 9 cake pan

Bahan-Bahan
250gm Cream Cheese - ( I used 750 gm cream cheese)
75gm Butter             - ( I used 225 gm butter)
Setengah cawan gula - ( I used icing sugar)
1 pek Cream Cracker ( anggaran dalam 40 keping ) - I pakai Hup Seng satu pek
2 cawan susu – untuk rendaman biskut ( I used about 3 cups++)
Setengah cawan Nestum  ( I used 1 cup of nestum + koko crunch)
Sedikit serbuk koko atau Milo ( did not used any)
Susu Pekat atau Sos Karamel ( I used Salted Caramel instead)

Cara Membuatnya
1. Masukkan cream cheese, butter dan gula di dalam bekas dan pukul sehingga sebati. (Put aside first)
2. Line your cake pan with foil/baking paper etc with some overhanging so that u can easily take out the cake.
3. Rendam biskut ( jangan sampai lembik ) dan susun di dalam loyang / bekas.
4. Sapukan sebatian cream cheese tadi sehingga rata. Jangan terlalu tebal.
5. Kemudian tuangkan susu pekat atau sos karamel … dilayangkan agar nipis untuk melekatkan serbuk nestum dan milo.
6. Kemudian taburkan serbuk nestum atau milo atau kedua-duanya. ( saya cuma tabur serbuk milo di lapisan atas sekali.)
7. Ulang langkah tersebut sehingga selesai. 
8. Masukkan ke dalam peti sejuk..(I left it in the fridge overnite)
9. Hidang ketika sejuk.


:: Tips ~  Setelah banyak kali membuat kek ni – saya dapati amat sedap sekiranya diletakkan sos karamel di setiap lapisan dan ditabur dengan serbuk nestum.

BANANA UPSIDE DOWN CAKE



I was going through my FB today and found this recipe from Faten cakes, thanks for the recipe...teruja lak nak buat cake ni, memang sedap sangat pun..lembut, x manis except topping tu manislah..
I also made a minor adjustment to the recipe because I used a square cake pan..

Ingredients:
3 large ripe bananas ( 5 Montel bananas)
250g flour
170g sugar
120g butter
2eggs
150ml milk
100ml yogurt
1tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla
1/8 tsp salt
1 tsp lemon juice

For the caramel: 
100g brown sugar
20g butter
1tsp ground cinnamon

Grease a pan and cover its internal part completely with parchment paper

Prepare the caramel:
Place the butter, brown sugar and cinnamon in a small saucepan. Melt on medium flame, stirring every now and then, until a dark brown caramel is formed.
Spread the caramel in the pan covered with parchment paper, quickly before it solidifies.

Slice the bananas. Mix them with 1 teaspoon lemon juice and place them over the caramel.

In a large bowl, beat the butter with sugar, salt and vanilla till soft.
Add the eggs, one at a time, then the milk and yogurt. Mix for 2 minutes.
Sift the flour with baking powder and baking soda. Add to the mixture and mix using a spatula.


Pour the batter over the banana slices. Level it and bake it 
in a preheated oven at 175C for about 35 minutes. The cake is ready when it has a golden brown colour. 

Cover the pan with a kitchen cloth for 10 minutes before flipping it over onto the serving plate.

Strawberry Chocolate Layered Birthday Cake

 This is Farah's birthday cake...made with much love for her..
 The cake is made with fresh strawberry and a chocolate cake layer.
On the first layer of the strawberry cake is slathered with strawberry jam and then topped with the chocolate cake. The chocolate cake is slathered with chocolate cream..yummss and lastly topped with the strawberry cake layer..frosted with butter cream...

I will put the cake recipes later...

HAPPY 19TH BIRTHDAY YAYA..

 My 3rd , Alya Yasmin, turned 19 years old on the 1st of May.....aww everyone was busy helping me out and also making sure they are back to join us for her birthday celebration. It was a family thingy....n I am happiest when everyone is at home and at the table.

The spread - now we reduce whenever possible but it still fills up the table.
There is garlic bread, salad, fried butter rice and the gravy for chicken.

RED VELVET CAKE


Resepi ni I cedok dri blog Anna Qaseh..terima kasih di ucapkan kepada Anna dan dia kata bolih di sharekan, lagi skli terima kasih..saya pun ambik kesempatan to copy and paste ajer lah..u tanya I dh try ke belom..memang belum try..olih kerana my desktop is rosak dan terpaksa pakai lappy cenonet nii maka I copy and paste dulu sebelum lupa dan ilang ..
Klu ada yg dh try tuu..bagitau lah ya..

Ada dia bagi dua resepi Red Velvet disini so bolih cuba yang mana u suka..

RESEPI RED VELVET CAKE -MOIST

Bahan-bahan
 
A:
  • 300 g tpg gandum
  • 2 camb serbuk koko
  • 2 camt baking powder
  • 1 camt soda bicarbonate
  • 1 camt garam
B:
  • 125 g mentega tawar*Ana guna buttercup
  • 280 g gula castor
C:
  • 2 biji telur (gred B)
D:
  • 1 camt esen vanilla
  • 1 camt cuka putih @cuka kurma
  • 1 camb pewarna merah
E:
  • 240ml buttermilk (Campurkan 1 cawan susu segar @ susu cair dengan 1 sdb cuka. Biarkan sebati bersama selama 10 minit sebelum digunakan.)

 CARA-CARA:
  • Ayak (A)-ketepikan
  • Pukul (B) sampai kembang & ringan.Masukkan (C) satu persatu dan pukul lagi
  • Masukkan (D)-pukul hingga sebati
  • Masukkan tepung yg diselang seli dgn buttermilk-pukul hingga sebati.
  • Alas & gris loyang saiz 9" dengan baking paper. Tuang adunan kek dan bakar hingga masak.
  • Atau masukkan adunan dalam acuan cupcake sebanyak 1/2 cup sahaja dan bakar pada suhu 180c @ 15 ke 20 minit.
  • Sejukkan dan hiaskan dgn cream cheese icing.

RESEPI RED VELVET CAKE- GEBU
Olahan : AnnaQawina

Bahan -bahan : 
  • 5 biji telur gred B@4 bj telur gred A
  • 250 gram mentega beku tanpa garam
  • *3 cawan tepung naik sendiri (Tepung gandum + 2 1/2 sdt baking powder)
  • *3 sudu makan serbuk koko
  • 2 cawan gula kastor
  • 2 sudu makan pewarna oil base
  • 1 cawan buttermilkkalau xde buttermilk blh tgk resipi kt bwh
  • 1 sudu teh garam- x letak
  • 1 sudu makan bicarbonate of soda @baking powder- Ana guna baking powder
  • 1 sudu makan cuka makan-Ana guna cuka kurma

BUTTERMILK:
  • 1 cawan susu segar
  • 1 sudu makan cuka makan atau jus lemon  
 Cara :
  • Satukan semua bahan dan biarkan selama 10 minit sebelum digunakan.

CARA-CARA:
  • 1. Panaskan ketuhar 180 degree celcius.
  • 2. Ayakkan bahan kering (*) menjadi satu bahagian ke dalam sebiji mangkuk. Ketepikan.
  • 3. Pukul mentega dan gula di dalam mangkuk pengadun kek elektrik hingga sebati.
  • 4. Masukkan telur sebiji demi sebiji, perlahan-lahan.
  • 5. dalam mangkuk buttermilk campurkan pewarna merah dan kacau sebati.
  • 5. Masukkan tepung dan buttermilk, berselang-seli hingga habis. Masukkan garam. Pukul hingga kembang dan ringan. Matikan mesin pengadun.
  • 6. Larutkan bicarbonate of soda/baking powder dan cuka kemudian tuangkan kedalam adunan kek. Kaup dan balik-balikkan hingga sebati guna senduk.
  • 7. Tuang adunan ke dalam dulang pembakar dan bakar hingga kek masak.

RESEPI KRIM CHEESE :
  • 500 grm whipping cream-brand VIVO
  • 250 grm cream Cheese-brand Phillidephea
  • 60 grm gula icing
  • 110 grm butter
  • 2 titik lemon paste
Cara -cara :
  • Pukul whipping cream hingga kental. ketepikan
  • Dalam bekas lain, pukul krim keju bersama semua bahan lain hingga berkrim.
  • Satukan whipping cream tadi bersama krim keju, gaul sebati, boleh juga  pukul dengan mixer dengan kelajuan perlahan.
  • Boleh digunakan untuk menghias kek anda

My Birthday Celebration

It was a day of eating..lucky thing, it was steam boat but then with the soup and water..really makes you be filled up very fast..

RICH MARBLE CAKE

Nice cake for afternoon tea ith your love ones.
Thanks Rima for the recipe..wonderful
125 gm butter ( unsalted SCS butter + 1/8 tsp salt)
125 gm sugar
125 gm melted dark choc
155 gm SRF
2 eggs
1 tsp vanilla extract
80 ml evaporated milk/ fresh milk

1. Melt dark chocolate and let it cool
2. Cream butter, sugar and salt till creamy
3. Add egg one by one and continue to beat until well blended
4. Add vamilla extract
5. Add in flour alternating with fresh milk.
6. Divide batter into 2 parts and add melted choc in one.
7. Pour batter alternately and make a swirl using a chopstick.
8. Bake in preheated oven at 170C for 45 minutes.

DURIAN FRESH CREAM CAKE

 
Baked and made this cake a few weeks ago....been having this itch to eat something durian-ie..hehehe made this marvelous sponge cake and have it layered..I went to Tesco and bought some durian in a box. I got about 300 gm of durian flesh ..yummmy and blended in to a soft pulp. Beat about 250 gm of whipping cream and mix the durian pulp and beat till well combined. 


Cut the cake into 2 or 3 layers and start frosting the cake. Keep the cake refrigerated before serving. At least 2 hour before serving..uhmmm I remembered I had a durian high that day and was fully satisfied..

MARBLE BUTTER CHEESECAKE



I made these a few weeks ago because I bought my new silicon pan from Kak Pau Citra Klasik..best jugak the pan ni..I took this recipe from Rima's blog..I always have a problem in writing it down..sorry Rima. Anyway, recipe is nice, soft and this picture is from the second time I made them. I think I still like the original recipe as below.


A:         225gm flour
1 ½ tsp baking powder
            ¼ tsp salt

B.                  200gm butter
175gm cream cheese
½ tsp grated lemon rind
175gm caster sugar
5 egg yolks

C.         5 egg whites
            1 tsp lemon juice
  
  1. Grease and flour 6 mini bund cake pans.
  2. Whisk butter can cream cheese till pale and fluffy.
  3. Add sugar and continue whisking;
  4. Add egg yolks and continue whisking. Lastly add grated lemon skins and whisk until well combined;
  5. Fold in A to B with a spatula and put aside;
  6. In a clean bowl, whisk C until stiff peak and add into A and B in stages and mix until well combined;
  7. Pour batter into pans and bake in a 180C for half an hour or till golden brown.
 Note: Original recipe does not have marble effect into it. I added ½ tbsp of black forest paste into 200 gm of plain batter. (Original comment from Rima)

My history with sponge cake

After many unsuccessful attempts be it sponge mix or own mix, I now can ..
I am experimenting with sponge cake mix..actually I FAIL at making sponge cakes...haaa confession of a try hard baker..I guess sponge cakes are the basic foundation of cake making..I can make everything else except a sponge cake. This is history in the making for me..at long last I CAN bake a sponge cake even though it is a sponge mix..BIG milestone for me..



It was soft, fluffy and light..Very happy indeed and here I make it like a Victoria Sandwich except that I topped my sponge cake with butter cream.. and decorate them with fresh fruits..
