This recipe is actually originates from Ina Gartens aka Barefoot Contessa. I watched the episode " The Dog's Birthday at the beach"..Dog lover's she must be..but I was interested in her food preps for that day. I m yet to try her hot dogs...meantime this is the potato salad she served that afternoon...not messy like mine but almost there.
10 russet or any type of potatoes u have on hand, boiled with skin on and quartered
1 head of cauliflower - cut into florets, dip in hot boiling water and toss
1 onion - diced
2-3 stalks of celery, washed n cut lengthwise n diced
1/2 cup mayonnaise
1/3 cup sour cream/ yogurt ( i used yogurt)
1/2 tsp ground black pepper
salt to taste
Place all in a large bowl and mix well.
Refrigerate till ready to use.
