Resepi Nasi Ayam Penyet Dan Sambal Sedap

Resepi asal dari FB Rahsia Hawa..bolih tgk sini

Bahan-bahan ( 6 orang )
Untuk Ayam
1 ekor ayam – potong 8 bahagian, rebus selama 10 minit dan toskan (simpan air rebusan ayam untuk buat sup)-kite guna air nie jgk utk masak nasik
½ sudu besar Jintan Manis – goreng tanpa minyak hingga naik bau
½ sudu besar Jintan Putih – goreng tanpa minyak hingga naik bau
3 sudu besar Biji Ketumbar – goreng tanpa minyak hingga naik bau
1 sudu besar Serbuk Kari Ayam
1 sudu besar Serbuk Kunyit
½ sudu besar Serbuk Lada Putih
3 ulas Bawang Putih
1cm Halia
Sedikit Air
1 sudu kecil Garam
Minyak masak untuk menggoreng.
Untuk Sambal
Sedikit minyak masak
10 batang Cili merah (lebihkan jika mahu lebih pedas)
10 biji Cili padi
10 biji Bawang kecil/merah, hiris
3 biji Bawang putih, hiris
5 biji Tomato, potong 4
5 cm Belacan
2 sudu Ikan Bilis-kite lebihkan cikit
3 sudu gula merah/secukup rasa
Untuk Nasi
3 cawan beras dibasuh dan ditoskan
3 ulas bawang putih
satu btg kayu manis
4 biji buah pelaga
2 kuntum bunga lawang
sedikit butter
garam
kiub pati ayam/daging
6 cawan air rebusan ayam (yg disimpan td)
Cara-cara
1. Untuk Ayam Penyet
2. Masukkan kesemua bahan (kecuali minyak masak) dalam pengisar, kisar hingga halus.
3. Lumur bahan yang telah dikisar pada ayam dan perap semalaman.-perap lama2 cenggini best.
4. (Simpan bahan kisar yang berlebihan untuk goreng tempe dan tahu.)- kite tadak tauhu/tempe. Tak buat.
5. Setelah perap semalaman, golek-golekkann pada tepung beras.
6. Panaskan minyak dan goreng hingga garing.
7. Untuk Sambal
9. Panaskan minyak. Goreng ikan bilis hingga garing/rangup. Angkat dan ketepikan.
10. Goreng belacan seketika Angkat dan ketepikan.
11. Masukkan bawang merah, bawang putih dan cili. Setelah layu, masukkan tomato. Gaul rata dan tutup api. Angkat dan ketepikan.
12. Sejukkan semua bahan yang telah digoreng pada suhu bilik.
13. Masukkan kesemuanya ke dalam pengisar atau lesung batu. Kisar atau tumbuk sehingga separa halus.
14. Masukkan semua bahan tumbuk ke dalam periuk dan panaskan.
Masukkan gula merah dan gaul rata.
15. Rasa sambal yang terhasil, tambah garam atau gula merah jika perlu mengikut citarasa.* Sambal boleh disediakan sehari sebelum hidangan sajian. Simpan sambal dalam peti sejuk. Panaskan sambal sebelum disajikan.
16. Untuk Sup
17. Masukkan garam secukup rasa pada air rebusan ayam.-kite tambah ayu manis, bunga lawang, pelaga dan ketumbar (boleh masukkan terus sup bunjut kalo ade).
18. Panaskan sebelum dihidangkan. Tabur hirisan daun sup dan daun bawang pada sup semasa disajikan.
19. Untuk Nasi
20. Panaskan butter. Tumis bawang putih, kayu manis, bunga lawang dan buah pelaga sehingga wangi.
21. Masukkan beras yg dah ditoskan. Kacau lebih kurang 3-5 minit.
22. Masukkan air rebusan ayam, garam dan kiub ayam/daging. Tunggu sehingga menggelegak sedikit.
23 Pindah ke periuk nasi letrik dan masak macam biasa.

AYAM GORENG MADU

Resepi Ayam Goreng Madu

Bahan-Bahan:
1/2 ekor ayam (dipotong sederhana kecil)
kicap manis
2 sudu besar madu
Bahan kisar:
2 cm kunyit
2 cm halia
4 ulas bawang merah
4 ulas bawang putih
1 btg serai
Cara Penyediaan:
Perap ayam bersama bahan kisar, kicap manis,madu dan sedikit garam selama 1 jam.
Goreng sehingga ayammasak/keperangan.
Toskan. Gaulkan sekali lagi bersama madu. Sedia untuk dimakan.
Tips:Terbaik jika dibiarkan ayam diperap semalaman

INDIAN VEGETARIAN DINNER 19.1.2014

Saturday dinner with some of the kids -minus Alya and Atik who have already gone back to college earlier.
I had Indian vegetarian the day before at my friend's house, Mastura Intan. I went with Nariman. Lunch at 6 pm whewww..
Anyway it inspired me to make these for my kids..but not as nice as what I had at Mastura's..uhmm must keep on making them.. 



SPICY PUMPKIN MASALA
Pumpkin                    - 1 big piece
Oil                             - 1 tbsp
Mustard                     - ¼ tsp
Cumin seeds              - ½ tsp
Cashewnuts               - 4 to 5 
Onion                        - 1
Turmeric pwd             - ¼ tsp
Ginger garlic paste     - ½ tbsp
Red chilly pwd           - ½ tsp
Coriander pwd           - ½ tsp
Sugar                        - ½ tsp
Besan flour                - 1 tbsp ( Chickpea Flour)
Fresh coriander leaves
Salt to taste
1.    Dice pumkin to small pieces.
       Take oil in a frypan and heat it over medium low heat.
2.    Season with mustard, cumin and split urad dal.
3.    Add cashewnuts and sauté for a minute.
4.    Add chopped onion and fry till transculent.
5.    Add turmeric pwd, ginger garlic paste and cook for 2 mins.
6.    Add sliced pumpkin pieces  and mix well
7.    Add red chilly pwd, coriander pwd, salt and sugar.
8.    Stir well and add water.
9.    Close it with a lid and cook till pumpkin is tender.
10.  In another pan, add a tsp of oil.
11.  Add besan flour and roast till golden color.
12.  Add roasted besan to pumpkin curry and combine well.
13.  Cook stirring,  covered for 2 mins or until fragrant.
14.  Turn off flame and add finely chopped fresh coriander leaves.
15.  Spicy Pumpkin Masala ready.
16.  It makes an awesome combo with roti, chapati, paratha and with rice varieties.



Spicy Bhindi ( Okra ) Fry:

Ingredients:
Bhindi / Okra                          - 250 g
Onion                                     - 1
Tomato                                  - 1
Green chilly                            - 2
Oil                                         - 2 tsp
Mustard                                 - ¼ tsp
Cumin                                    - ½ tsp
Asafetida                               - a pinch
Curry leaves                           - a few
Turmeric pwd                         - a pinch
Red chilly pwd                        - 1 tsp
Salt to taste
Fresh coriander leaves

 Method:

1.         Wash the okra and pat dry.
2.         Slice them to thin pieces.
3.         Chop onion, tomato to slices.
4.         Slit green chillies.
5.         Heat oil in a fry pan.
6.         Temper with mustard, cumin, asafetida and curry leaves.
7.         Sauté onions till light brown.
8.         Add tomatoes and sauté till it is soft.
9.         Toss in  the sliced okra and green chillies.
10.      Add turmeric, red chilly pwd, salt and mix well.
11.      Cook for 3 to 4 minutes by closing with lid.
12.      Stir gently and drizzle a tsp of oil to sides.
13.      Cook until well blended on low heat.
14.      Garnish with fresh coriander leaves and serve as side dish...:)


CHICKEN MAKANI( INDIAN BUTTER CHICKEN)
Ingredients
1 tablespoon peanut oil
1 shallot, finely chopped
1/4 white onion, chopped
2 tablespoons butter
2 teaspoons lemon juice
1 tablespoon ginger garlic paste
1 teaspoon garam masala
1 teaspoon chili powder
1 teaspoon ground cumin
1 bay leaf

1/4 cup plain yogurt
1 cup tomato puree
1/4 teaspoon cayenne pepper, or to taste
1 pinch salt
1 pinch black pepper
 1 tablespoon peanut oil
1 pound boneless, skinless chicken
thighs, cut into bite-size pieces
1 teaspoon garam masala
1 pinch cayenne pepper
1 tablespoon cornstarch
1/4 cup water

Directions
Heat 1 tablespoon oil in a large saucepan over medium high heat. Saute shallot and onion until soft and translucent. Stir in butter, lemon juice, ginger-garlic paste, 1 teaspoon garam masala, chili powder, cumin and bay leaf. Cook, stirring, for 1 minute. Add tomato sauce, and cook for 2 minutes, stirring frequently. Stir in half-and-half and yogurt. Reduce heat to low, and simmer for 10 minutes, stirring frequently. Season with salt pepper. Remove from heat and set aside.

Heat 1 tablespoon oil in a large heavy skillet over medium heat. Cook chicken until lightly browned, about 10 minutes. Reduce heat, and season with 1 teaspoon garam masala and cayenne. Stir in a few spoonfuls of sauce, and simmer until liquid has reduced, and chicken is no longer pink. Stir cooked chicken into sauce.

Mix together cornstarch and water, then stir into the sauce. Cook for 5 to 10 minutes, or until thickened.


EGGS AND GREEN CURRY CHILLI
Ingredients:
50g tamarind - mashed with 1/2 liter of water to extract juice
5 hard boiled eggs
8-10 green chillies - slit lengthways
5 shallots - sliced
2 sprigs curry leaves
2 stalks coriander leaves - chopped
1 tsp mustard seeds
4 tbsp of oil
salt to taste

For The Curry Paste
1 tbsp coriander/ketumbar powder
1/2 tbsp cumin/jintan putih powder
1 tsp grounded/blended ginger
1/2 tsp grounded/blended garlic
1 tsp turmeric/kunyit powder
** mix all together
Preparation:

When oil is heated, fry the chillies for about 2-3 mins, remove and keep aside.
In the same oil, saute the shallots for a couple of mins.
Add in the curry paste, curry leaves, mustard seeds and salt to taste
Stir to combine all these ingredients before pouring in the tamarind juice.
As soon as the curry is heated through, add in the fried green chillies and eggs.
Cook for another 3-4 mins and as soon as small bubbles appear, off the heat.
Stir in the coriander leaves before serving.

We bought the chapatie ( no time to make them) and some white rice.

NASI AYAM ? / NASI BERLAUK AYAM WITH THE CONDIMENTS

One of those lazy days...with black pepper chicken, coleslaw and garlic bread..

Black pepper chicken - just marinate it with black pepper, light soya sauce, honey and oyster sauce.
Marinate for one hour or the longer the better..bake at 200 C for half hour and check whether it is cooked.

Coleslaw...shred carrots, cabbage and mayonnaise, lemon, black pepper and salt. Mix well and refrigerate till u are ready to serve them.

Garlic bread..cut the frech bread into 4 and split each into 2..spread with garlic butter and bake at 160 C for 10 minutes till golden brown.*** mince the garlic and add to the butter add some minced chives, if u have them at home.

NASI KABSA

Today was a lazy day for me...we have had fish , in particular, ikan kembong...dah berbagai-bagai resepi digunakan untuk memasaknya..this is because my hubby is away in Sungei Petani and he has gone to Kota Kuala Muda and bought fishes..the first time he brought the fishes back we were very excited but thereafter hahaha...dh xmo tgk another ikan kembung for a while..he was telling us in total he bought about 50 kg of ikan kembung..No wonder laaa....hehehe

Anyway, I have gone through my list of recipes and thought I'd try Kak Nor's recipe of Secubit Garam..x ler sama but I like the taste and also I buat ler adjustment according to apa yg ada d umah aja.

 Bahan-bahan:
1 ekor ayam ( potong 16 keping)
3 pot/cwn beras basmati ~ cuci dan rendam 30 mionit, toskan (6 pot beras biasa - di basuh dan toskan)
4 1/2 pot/cwn @ secukupnya air panas
2 sudu minyak masak
1 sudu minyak sapi
1 batang kayu manis
3 biji buah pelaga
2 biji bunga cengkih
1 biji bawang besar - dipotong dadu
3 ulas bawang putih - dipotong dadu
1 batang karot ~ diparut
1 biji buah tomato - dikisar ( 2 biji buah tomato d kisar)
2 sudu tomato puri (x masuk xde stok)
1/2 sudu kecil pewarna kuning (saffron) ( guna 1/2 sudu serbuk kunyit)
1 sudu besar rempah kabsa ***
1 biji lemon hitam/kering - dicucuk bahagian tengahnya ( xde tpi buh kulit limau kuning and 1 tsp perahan limau)
1 biji lada bengala merah (red capsicum) ~ dipotong dadu
1 sudu kecil lada hitam biji/serbuk
2 biji cili merah ~ jgn potong
1/4 cawan kismis
Garam secukup rasa dan gula (kalau suka)

Cara penyediaan:
1. Panaskan minyak dan minyak sapi. Tumiskan kayu manis, bunga cengkih, bunga lawang dan buah pelaga, bawang putih dan besar dan goreng sehingga wangi.
2. Masukkan buah tomato, tomato puree, lemon, saffron dan rempah kabsa dan goreng sebentar.
3. Kemudian masukkan ayam dan masak sehingga ayam masak. Tambahkan garam secukup rasa dan juga gula.
4. Masukkan karot, capsicum, cili merah, kismis dan beras. Masukkan air panas secukupnya dan masaklah nasi sehingga masak.
5. Kacau/gembur nasi bila nasi betul2 masak, selepas 30 minit supaya nasi tidak hancur.

**
Ini Kak Nornyer catatan, utk sukatan air, setelah ayam masak, terdapat air dari ayam bercampur dgn rempah ratus tu jadi K.Nor kurangkan sukatan air sebanyak 3/4 cawan. Alhamdulillah elok jer nasi masak dan tak lembik tak juga keras. tapi kena ingat ya, sukatan air ni bergantung pada jenis beras yg digunakan.

*** HOMEMADE REMPAH KABSAH

Bahan - bahan:
1 sudu makan bunga cengkih **
1 sudu makan lada hitam **
1 sudu makan jintan manis **
1 sudu makan jintan putih **
2 sudu makan biji ketumbar **
1 sudu makan buah pelaga **
1 sudu buah pelaga hitam (black cardamom pods) **
1 sudu makan serbuk cili
1 sudu teh kunyit

Cara penyediaan:

1. Goreng tanpa minyak bahan2 yg bertanda ** sehingga naik bau dan angkat.
2. Kemudian kisar semua bahan sehingga hancur.
3. Simpan rempah yg telah dikisar didalam bekas yg kedap udara.

Jika tiada buah pelaga hitam, boleh gantikan dgn buah pelaga biasa. Serbuk rempah ini boleh juga digunakan pada semua masakan ala arab termasuklah ayam dan daging.

** Didalam resepi asal, halia dicampurkan sekali. Saya tidak masukkan halia sebab rempah2 diatas adalah kering dan boleh disimpan lama. Masukkan halia semasa nak msk makanan.



Sos:
1 biji tomato ~ hiris
5 biji cili besar hijau (nk pedas tmbh lagi) ~ hiris
1 tangkai batang ketumbar ~ dihiris halus
Garam
Gula
Perahan lemon.


Cara penyediaan:
~ Kisar semua bahan dengan perahan air lemon, sekejap sahaja. Jangan sampai terlalu hancur.

Chicken Nite

Tonite is chicken nite but with mac and cheese, salad and the Arab bread for those who wanna roll their chicken and salad together.. also mushroom soup too

The spread.. 


Recipe

12 pieces of chicken drumsticks
2 tbsp honey
2 tbsp light soya sauce
2 tbsp dried rosemary
1 tbsp coarse ground balck pepper
a few drizzles of olive oil

Mix all the ingredients together in a bowl except the olive oil. Add the chicken drumsticks and mix well. Transfer the marinated chicken drumsticks into a container and chill for a few hours.
When ready to use, line a baking tray with foil and place the drumsticks on it..drizzle with olive oil.
Bake in a pre heated oven at 200C for 20 minutes, turning it at 10 minutes..

HAPPY 19TH BIRTHDAY YAYA..

 My 3rd , Alya Yasmin, turned 19 years old on the 1st of May.....aww everyone was busy helping me out and also making sure they are back to join us for her birthday celebration. It was a family thingy....n I am happiest when everyone is at home and at the table.

DINNER TONITE

 Today was a special day, we had our school 90th school reunion...will take about it later.
 After a long day and all the excitement ..I came back and was really tired..so climb into bed and have a snooze...a very good snooze I might say. Came down for tea..woww  my maid sometimes wows us her Masterchef skills( from watching the series) lempeng and sambal ikan bilis..rest for a bit then prepare for family dinner .. a late one a I started preparing at about 730 pm.

Tried a new roast chicken recipe , made Yorkshire puddings, cauliflower salad, Ceaser's salad and the gravy for the chicken. Simple yet enough to fill the hungry stomachs.

The family dinner spread


 Caeser's salad

2 heads Local Romaine salad , clean and cut into smaller pieces
1 red bell pepper, cut into strips
1 avocado, cut into pieces
Homemade croutons**

Mix all the above together, spoon the salad onto the plate and drizzle with Ceaser's salad sauce. 
P/S : put the croutons into the salad and mix the salad just before serving.

I made my own Ceaser's salad sauce ( my version of what I think the dressing should taste)

3-4 tbsp Heinz Balsamic Vinegar
4 tbsp Mayonaise
2-3 tbsp Olive Oil
2-3 tbsp Water
1 tbsp lemon juice
Black pepper , sugar and salt 

I put everything in a clean bottle and close the lid. Give it a few shake..Done..yumss..

**Home-made croutons -  brush melted butter or olive oil to both sides of the bread. Cut up into small pieces and put them on a baking tray. Back at 180 C for 10 min or till golden brown. take out and cool.

Cauliflower Salad

1 head of cauliflower, cleaned and cut into florets
a bunch of coriander leave
1/4 cup shredded cheddar cheese
1 tbsp lemon juice
3 tbsp mayonaise
Black pepper, salt and sugar to taste

Boil some water enough to submerge the cauliflowers. When the water is boiling, put the cauliflower in for a minute or two and toss. Put aside to cool.
Once cooled, put all the ingredients in a bowl and mix well.
Put in the fridge till ready to serve.

Roast Chicken

"This is a very flavorful and simple way to roast a chicken. Recipe inspired by Barefoot Contessa."
Ingredients
1 whole chicken
1 bunch thyme ( I used rosemary)
1 lemons, quartered
1 head garlic, halved
2 tablespoons melted butter ( I used olive oil)
salt
pepper

Directions
Preheat oven to 425 degrees.
After removing giblets (discard or save for another recipe), salt and pepper inside of chicken.
Stuff the cavity with rosemary, lemon quarters and garlic halves.
Brush the outside of the chicken with olive oil.
Salt and pepper outside of chicken.
Tie the legs together with string (good idea to soak string in water prior so it won't burn in the oven) and tuck the wings under the body.
Cook in oven for 1 1/2 hours or until done.


(hehehe cannot find any strings to tie my chicken...so I got some ribbons from some bunga telur lying around in my cupboard and use them..perfect)

Chicken Mushroom Pie - My very own again...


Uhmmm I got up in the afternoon after a short nap and decided that I am baking Chicken mushroom pie for dinner..

Ingredients
1 kg chicken fillet, cut into small pieces
1 can of cream of mushroom soup plus  1-2 cups of water
300 gm of fresh mushroom of your choice  - I used abalone mushroom cut into cubes
1 onion - diced
2 garlic - minced
1 tbsp cornflour ( u can add more if there is too much gravy to your liking)
Salt and pepper to taste
Flaky pastry ..I bought 2 x 10 pieces Kawan brand pastry 

Method:
1. Heat up the oil and fry the diced onions together with the minced garlic;
2. Put in the chicken fillets and a little water;
3. Let it simmer for a few minutes;
4. Add the abalone mushrooms and continue to simmer;
5. Add the mushroom soup and water;
6. Once the mushroom is tender then add the cornflour;
7. Let  the gravy thicken a bit then set it aside to cool. The filling is ready.
8. Put the filling into a large pie dish or individual alum foil container. I put mine into a dozen foil container.
9. Roll out a bit of the pastry sheet enough to cover the top of the filling.
10. Brush with egg  yolk and bake till golden brown in a preheated oven at 200C  for 25 minutes.
11. I served the pie with steamed mixed vegetables and peas plus baked potato chips..
12. I took it out of the container when serving..and also add some brown sauce.
