9 + 1 Grain Bread




I adapted these from the Allrecipe...recipe..try this gorgeous and very robust bread..soft on the inside.

Ingredients

1 1/3 cups water
2 tablespoons butter, softened
3 tablespoons honey
1 1/2 cups bread flour
1 1/3 cups whole wheat bread flour
1 teaspoon salt
1 teaspoon active dry yeast
1/2 cup flax seeds ( 1 used the 8 grain mix)
1/2 cup sunflower seeds

Directions

Bread Machine method:
Place all ingredients (except sunflower seeds) in the pan of the bread machine in the order recommended by the manufacturer. Select basic white cycle; press start. Add the sunflower seeds when the alert sounds during the knead cycle.

Mixer Method:

Just put everything in and mix well for about 5 minutes..if the dough is too sticky then add 1/3 cup of the wheat flour. Rest the dough for one hour. Punch the dough down and divide into two. Grease two bread pan and put the dough in and rest again for an hour or more.
Once double, then bake in a preheated oven at 180 C for 40 minutes. When u hear the hollow sound when u knock the top of the bread, it means that it already baked.

Bread making ..with Mamazieza






Those above are made when I attended Mamazieza's class early April recently to be exact 7th April at Lea Oven's in Kota Warisan..we spend the whole day together baking a lot of breads I think 8 types all together. Very tiring but overall a satisfying day..we get to bring home the breads..hehehe..thank you Mamazieza..



Look at my Roti Benggali ..very nice isn't it not? I am so proud of myself..weeee......



These are MINE made at home.. my roti naik ala Mamazieza..well risen and smooth , soft texture..very nice indeed..I called it the musim Meroti..My adventures of making roti is still at a stand still as I have encountered a lazy phase..uhmmm procrastinating...al the time

This is the wedding dais for my niece's wedding recently. Very modern, elegant and nice..my kinda of taste..hehehe..so I took the pix and here it is..very nice isn't it not? But unfortunately I did not get to see the wedded couple on the dais as we came later in the afternoon.

Congratulations to the happy couple..!!

SARDINE BUN


Teringin tengok Sis Lea Safuan nyer Sardine Bun so ni ha my version ofthe bun. I am using Mamafami's bread recipe for this bun.

Ingredients :
1 egg
Approximately 200g lukewarm water (egg + water = 265g)
120g sugar
6g salt
5g bread softener
500g bread flour/high protein flour
20g milk powder
5g bread improver
11g instant dried yeast
80g margarine

For the sardine filling:
1 can of sardine
1 onion, cubed
1 tbsp oil
1 tsp black pepper
salt to taste
Mayonnaise and chili sauce

Bread maker method :
1. Into the breadmaker pan, pour in the water and egg. Add sugar, salt and bread softener.
2. Top it with flour, milk powder, bread improver and instant dried yeast.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which takes about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 49 to 50g each.
5. Form each portion into a ball and arrange on a big paper cup and flatten the middle to make an indent in middle.
6. Put the sardine filling   Leave to rise for another 30 minutes or so.
7. Before baking, pipe the mayonnaise on top of the bun and then pipe the chili sauce
Preheat oven to 180 for 15 minutes and bale for 15-20 minutes or golden brown.

Mixer method:
Put all the ingredients together in a mixer and mixed it for 5 minutes.
Then add the butter/margarine and mix till dough is pliable. Then follow step 4 on wards.
Happy trying..my kids said the texture of the bread was soft and nice.

DADIH COKLAT





Got these from nasyieen.blogspot.com..and I copied word by word from her blog, thanks..Made these for our tahlil at BIL's today to celebrate FIL's 86th birthday which falls on the 4th April..did not try it yet but looks good..cannot wait to try it..I have done minor amendments though to the recipe whch i have noted below..so happy this time it is separated as above..have done some other recipes and it just mixed together..

Bahan-bahan:
10gm serbuk agar2 - kalau nak guna agar2 bertali boleh guna 1/3 dari sebungkus agar2 cap bulan(warna merah) ( I add another 3 gm to the milk portion as I feel it is too soft)
1 liter susu segar biasa
1 liter susu segar berperisa coklat
1 1/4 cawan gula (atau 17 sudu besar gula) 
1.2 liter air
1 sudu teh garam
1 sudu besar tepung jagung - dibancuh dgn 2 sudu besar air
1sudu teh coklat emulco
Cara-cara:
Masak agar2 bersama air hingga mendidih. Jika guna agar2 bertali, rendam dulu supaya lembut dan lebih cepat hancur. Masukkan garam dan gula. Masukkan adunan tepung jagung. Masak hingga mendidih.
Bahagi dua adunan agar td. Masukkan kembali 1 bahagian agar kedalam periuk dan masukkan susu segar putih. 1 bahagian lg dimasukkan kedalam periuk yg lain dan masukkan susu berperisa coklat dan coklat emulco.
Masaklah kembali adunan tersebut. Gunakan api yg sederhana sj dan hendaklah sentiasa dikacau agar tidak berketul. Apabila nampak tanda2 mendidih, padamkan api. Peringatan: jgn masak terlalu lama nanti dadih menjadi keras.
Biarkan hingga suam baru lah ditapis sebelum dimasukkan kedalam bekas. Masukkan dadih yg berwarna putih dulu dan bila ia sejuk dan mengeras bahagian atasnya barulah dimasukkan dadih coklat. Kalau nak lebih cepat bolehlah dimasukkan kedalam peti ais seketika.
Sejukkan dalam peti ais, pastu bolehlah dimakan.
Sekiranya ada yg nak buat berperisa strawberry, bolehlah guna susu perisa strawberry atau pun boleh juga guna kedua2 susu fresh putih dan tambahkan pewarna merah dan strawberry emulco.

her notes:
 Satu kaedah lagi utk menghasilkan dadih coklat bagi yg bimbang jika ikut cara2 diatas menyebabkan rasa dadihnya terlebih manis(bg hb dan anak2 saya rasa manisnya sedang elok je). Setelah diikut step pertama, masukkan 2 liter susu segar (putih) kedalam periuk (tanpa menggunakan susu segar berperisa coklat). Kemudian bahagi 2 adunan dadih dan 1 bahagian itu dimasukkan 1sb coklat emulco. (diletakkan 1sb kerana aduanan asalnya berwarna putih sdgkan jika guna susu segar perisa coklat perlu letak 1st shj )

Monster Cookies





Monster cookies, I have been wanting to make some for my grand daughter for a lonnng while, now I managed to make some for and she ended up not liking it..she said it is too tough for her teeth..hehehe. Actually she just want the chocolate chips and the M n Ms..

The cookie is a bit hard actually more of crunchy..because of the rolled oats..smells nice..peanut butter..I think it comes from AllRecipe.com ..


1/4       cup butter, softened
1          cup sugar
1          cup plus 2 tablespoons brown sugar
2         cups crunchy peanut butter
3         large eggs
1          teaspoon corn syrup
1/4       teaspoon vanilla
4 1/2    cups rolled oats (certified gluten free, if necessary)
2         teaspoons baking soda
1/4       teaspoon salt
1          cup M&Ms
1          cup chocolate chip morsels
Cooking spray

1. Preheat oven to 350`.

2. Combine butter, sugar and brown sugar at medium speed of an electric mixer until smooth. Add peanut butter, eggs, corn syrup and vanilla; mix until just combined. 

3. Stir in oats, baking soda and salt using a large wooden spoon. Gently stir in M&Ms and chocolate chip morsels until well-combined. 

4. Drop 1/4 cup portions of dough about 4 inches apart on a baking sheet coated with cooking spray. Bake at 350` for 12 to 15 minutes or until lightly browned. (Bake less time for a chewy cookie, more time for a crunchy one.) Let cool for 3 minutes on baking sheets. Remove to a wire rack to cool completely. But eat at least one while it's still warm.
Yield: about 2 1/2 dozen.



I made too much of the chocolate dough so I combined it with the recipe and put the cream cheese and black cherry filling. Original recipe below and I took it off Mamafami's blog again..hehehe

Step 1 to 4, I used the previous chocolate dough and proceed with steps below.
 5. Form each portion into a ball and arrange on a baking tray. Leave to rise for another 30 minutes or so.
6. Before baking, brush the dough with some fresh milk and use a scissor to cut the top of the dough.
7. Pipe some blueberry ( in this case I used black cherry) filling on top and cream cheese filling.
8. Bake in a pre-heated oven at 180c for 20 to 25 minutes or till golden brown.
9. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Cream cheese filling
For the Filling

250g Philadelpia Cream Cheese
60g butter
60g icing sugar
1 egg

Method

Cream all the ingredients for the filling till smooth.

CHOCOLATE BUNS WITH CHOCOLATE FILLING





This was today's adventure...sweet chocolate bread with chocolate filling...soft and nice..hahaha this is from Mamafami's blog..Spice and Splendor ..and my second try at it..I used imported cocoa powder - the chocolatey taste is very pronounced..yummy.. I made two recipes..


IngredientS A :

450g high protein flour
50g cocoa powder
25g milk powder
75g sugar
10g instant yeast
1 teaspoon bread softener
1 egg
1/2 teaspoon salt

Ingredients B :

250ml water
75g margarine

Ingredient C :

Chocolate filling (from the bakery)

Method : (Bread Maker)

1. Pour water and salt into the bread maker pan. Add in egg. Top it with flour, cocoa powder, milk powder, sugar, yeast and bread softener.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in margarine and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including proving.
4. Divide the dough to 40g each. Shape into a ball. Leave to rest for another 10 minutes.
5. Flatten the dough, place a teaspoonful of chocolate filling in the middle and roll into a ball.
6. Arrange the dough on a baking tray. Let it prove till double the size. Sprinkle with a bit of water before putting the tray into the oven.
7. Bake in a preheated oven at 180 degree celcius till golden brown.
8. Once out of the oven, brush some margarine on top.
For those who do not have a breadmaker, can put everything in the mixer except the butter?margarine, once mixed already then add the butter/margarine and mix again till well combine then follow step 4 onwards.

Dinner Rolls


Tried making these for the birthday bash..these are good but I made a boo boo ..lucky thing it worked out fine but the texture is not as good as I would imagine. Should try it again soon... the recipe is as below


Ingredients :

3 1/4 cups of flour
1 tsp of salt
1 1/4 cup of milk
1/2 stick of butter - 1/4 cup
3 tbsp of sugar
1 packet of yeast - 7 grms

1) Put milk, sugar and butter in a small saucepan and warm up milk on medium heat. Turn off heat once the butter melted. Set aside and let it cool.
2) When the milk is just warm to the touch or around 90 degree then put in flour, salt and yeast.
3) Stir everything together until well combined. Knead the dough for a few minutes and then cover and set it aside to proof to double its size. I let mine proof overnight.
4) Prepare muffin pan or any baking pan and spread it generously with butter.
5) To form the rolls, pinch some dough and make it into a small ball. Place 3 balls into each muffin tray.
6) Cover the pan with cloth and set it aside for second proofing and it might take another hour.
7) Brush the top of the rolls with beaten egg and bake in a pre-heated 350 F oven until golden brown. It might take around 25 min.
