Pizza and salad Nite



Ceasar's Salad..my very own

Romaine Salad, cut into pieces
Chicken Breast, bakar dan siat2
Croutons,
Feta Cheese
Ceasar Salad Cream
Olive oil

Mix all the above and serve..






Pizza..am sure all of u out there dah pandai buat pizza sendiri.

My topping consist of chicken pepperoni, capsicum, onions, mushroom, black olive and mozzarella cheese..of course before the topping tu ada saucenyer..

Roti John

I was browsing the net for some tea time snacks for the kids and came across Roti John.
Easy , fast and satisfying for the kids.


Recipe:

Half a dozen sausage roll/bagel/french loaf
300 gm mince beef, pan fried till cook ;
6 eggs
Spring onions, minced;
Onions, minced
Salt and pepper to taste

MIxed all the ingredients together with exception of the sausage roll. Put two tbsp of oil in the pan and heat up oil. Using a ladle put 2 spoonfuls of the mixture into already heated up pan.
Take the bread, in my case the sausage roll, and cut into two and put face down onto the egg mixture. Once cook turn the side up and let the back be heated as well.

Decorate with slices of tomato and cucumber..bona petite..

PULUT TANAK



This is my past revisited. My late father used to love this pulut tanak with the accompanying condiments of young grated coconut, sambal cili kering and fried salted fish..well now my kids love them very much..of course there's me..can never get enough of it..sigh**

a) For those who don't know what is pulut tanak..it's actually glutinous rice boiled with water, above the level of rice, in a closed pot. Once it has cooked, throw away the excess water . Turn the pot bottoms up whilst being closed. leave it like that for about 10 minutes so that all the excess water will drain out. Serve.

b) Sambal cili kering

20 pcs of dried chillies, deseeded and dip in hot water till soft.
2 inches belacan
salt and sugar to taste

Pound the above with a batu tumbuk (suddenly forgot wht's it is called..well u know what I mean) till well mixed.

c) Salted fish

Just fry the salted fish and pound the fried salted fish just to break it up..I used salted Ikan Talang..or any salted fish will do.

d) Fresh grated coconut

Use the white fresh grated ones will do.

To assemble just put a bit of each as per the picture above.

CURRY PUFFS ALA TIPTOP BALIK PULAU



These are mini spicy minced beef curry puffsss..a mouthful to say and also to eat..hehehe..it's a reminder of those years gone by where my grandfather used to take us for holidays in Penang. We will visit this restaurant called TipTop in Balik Pulau just to eat their delicious crispy and spicy curry puffs..n 7 up floats..remembered that thin layer of float over the upper lip like a moustache..lip smacking good..uhmm those days, I remember, too, we can scoff as much food but it never shows..sigh**

Today's Teh time treats - Crabby Roll

Today, I was a bit lazy but still I want to make these Crabby Roll , recipe I got from Suhana's kitchen..thanks Suhana.my kids loved them and I of course loved the very much. Below is the rolls ready to be fried.




These are already fried and I cut some so that we can see a cross-section of the filling..too full to see the filling.

Crabby Roll

Fillings:

10 crabsticks, diced
4 franfurters, diced ( I used 3 fried tofu and diced)
3 eggs, separately moist scrambled
3 cloves of garlic, minced
I shallot, minced
2 red chillies, de seed and slice finely
salt and pepper totaste
1 tbsp sweet n sour sauce ( I used Hoisin sauce - don't have sweet sour sauce)

Heat abt 2 tbsp of oil in wok and saute the garlic, chillies and shallot. When fragrant, add in the diced items and the eggs. Stirfry quickly, season with salt and pepper and add the sauce. stir till cooked.
Remove from heat and drain over a colander to rid off excess oil, if any. Cool the fillinf before rolling up in popiah skin. Fry the popiah.

Serve with chillie sauce.

My Garden

My garden now after 2 months of actually buying and planting them myself..looks ok right?

Very happy that my garden is now green and have flowers too. Loved hibiscus..bought red, pink,

orange and yellow..single and multi petal ones..

Tea part 2 - Apam Chocolate



These are Apam Chocolate..thanks to Cik Ton for the recipe..whilst surfing her website semalam nampak sedap and senang sangat nak buat..so ini dia hasil nyer..memang nice and soft..n u would not believe how easy to do it.

Bahan2 nyer

1 cup tepung gandum
1/2 cup gula
1/2 cup susu pekat
1/2 cup minyak masak
1/2 cup air
1 egg
1/2 tsp sodium bicarbonate
2 tbsp serbuk koko

Cara membuat nyer:

Masukkan semua bahan dalam blender and blend kan..
Masukkan dalam cupcake liners and steam for 10-15 minutes)

Very easy indeed..try lah..

Afternoon Tea



Last nite I was surfing the net and found Zaiton's website Rumahku SyurgaKu..sounds macam orang Kedah..by the way I am orang Kedah..Simpang Kuala, Alor Star to be exact.

Minggu lalu I was like craving for cucur udang and drove all the way to Makbul kat Taman Tun to get some. Balik makan alangkah penat rasanyer because it does not taste as nice as it used to.So I am still harboring the hope of being able to eat a really nice cucur udang..hah I came across Cik Ton nyer site and ada cucur udang..yahooo..terus buat today..makan petang. Lega as it taste really good and soft..not tough when cold too. Simply gorgeous..kenyang sampai ke tulang itam..ni resepi dia cilok dari Cik Ton nyer site..tima kasih ..sori ye Akak cilok word by word..

Resipi Cucur Udang

Bahan2 nyer

1/2 kg tepung gandum
1 biji telur
1 sudu besar mentega atau minyak masak
Udang, taugeh, kucai dan daun bawang ( I buh grated carrots and udang jerr)
Sedikit garam and gula
Air untuk membancuh secukupnya
1 cawan air panas

Cara2 :

a. gaul tepung dengan mentega, garam, gula and telor
b. masukkan air panas..kacau
c. masukkan air sedikit2 and kacau rata. Agak2 adunan dah just for cucur udang
d. sudukan adunan and goreng dalam minyak yg panas.

Kuah kacang

a.2 cawan kacang tanah yg telah d goreng tanpa minyak dan d kisra
b. 2 sudu besar gula merah/gula melaka
c. 1/2 sudu besar gula pasir
d. garam
e. sedikit air asam jawa
f. 1 sudu besar cili mesin..tambah lagi klu nak pedas

Cara2:
a. bancuh kacang tanah dengan air ( +/- 3 cawan air)
b. didihkan kacang tanah tadi dgn api perlahan bersama cili mesin, gula merah, gula pasir, garam dan air asam jawa.
c. biar mendidh selama 15-20 minits
d. tambah air panas klu pekat sangat

Desserts ..

Was surfing through the net ..visiting some new websites..and found this recipe. .Apple Bread Pudding..surprise2 it is so good..never really like bread pudding but this one I love..recipe I took from Suhana's site..I actually do not know how to go there again..hehehe

I will post the recipe when I am able to retrieve the recipe.

To make it my own ..hehehe..I added some walnuts and dried cranberries. I also ate it with ice cream but u can eat it with custard, cream etc..etc..

Made them in cups but I took them out of the cup and dress them with ice cream..



I browsed another website and found a recipe called Pudding Lychee Dangdut..hehehe..loved the name and gave it a try..I thought I had a few tins of Lychees at home but unfortunately not..so I replaced the Lychees with canned Aloe Vera in honey. Turned out good but I always am not good with making smooth soft jelly..mine is a bit hard but ok..



Recipe as I remember it..maybe I should halved next time..

28 gm jelly strings or 10 gm powdered jelly
2 litre water
2 cups sugar
I can evaporated milk
2 cans of Lychee (separate the Lychee from the syrup) - substituted with Aloe Vera in honey
1/4 tsp salt

Boil the water and put the string jelly. Simmer until all the jelly is dissolved and add sugar. Strain it.
Add in the evaporated milk, salt and lychee syrup.
Pour into a mould or into small containers and cool it . Top the jelly with lychees ( Aloe Vera) before refrigerate .

Lunch on 10.1.10

Sunday is normally a busy day for me..last year every Sunday is getting ready for lunch at home or in my FIL's house in Bangsar..also my 2nd Atik will be going back to SM Teknik Cheras before 6 pm.
Today my hubby says he will get his dad to come over for lunch..so I made start with making the soup bayam, thinking my 84 year old FIL is old so food must be not spicy while most of us loved spicy food.


Bayam (local spinach) soup topped with fried ikan bilis.


To cater for those who love spicy food, I made Masak Lemak Rebung with cili padi..uhmm but cili padi let me down ..it's not sooo hot.



Uhmm kids love fish..got the maid to look in the freezer for a fish that can feed at least 10 persons uhmm she came back with Siakap..so at first I want to steam but ended up deep frying the fish and bathed in soy sauce and garnish with spring onions and local parsley..hehehe actually overdoing on the sauce..


Another dish is stir fried vegetable with Japanese tofu, fishballs and crabsticks.


This is a must for the family...makan salad , timun and tomatoes..to counter the other rich food on the table.

This is my own creation.Spicy honeyed prawn..I marinated the prawns about 600 gms with 2 tbsp of meat curry powder + 1 tbsp of oyster sauce + 1 tbsp of honey and put aside for at least 15 minutes.
Cut 2 bulbs into small rings and wash a handful of curry leaves. Heat up 3 tbsp of oil and fry the onion and curry leaves till soften. Add the prawns and walla..it's ready for the table..easy erk??

New beginnings for a new year

This is a brand new year with many new beginnings for me..at least.

I am supposed to loose weight uhmm..everybody hates that word WEIGHT ..yes that's right but I have got to through that journey for myself and my family. But then I love to cook since the last few years. I have in fact loved cooking since my college days but due to constraints like studies, work and later marriage. Yes then cooking was not my priority but I do cook, not as often as I wanted too. Had maids who, can really cook so I am happy or shall I say felt lucky to have them around then..

I had seven beautiful kids along the way. Two girls and five boys..age ranging from 10 to 22 years of age. My eldest daughter Farah is married and has a little girl named Sarah Aiesya who is now 3 and half years old. My second is Atik, going to be 17 this year and taking his SPM exams at the end of the year..then there is Alya a 15 going to 16..uhmmm at this age of wannabee 21..I think she did good for her recent PMR.surpassed what I'd she'd do..

I also have a set of twins aged 14 going 15 this year, Amir and Amar..non identical but very close to one another..especially Amir the elder of the two is soooo dependant on the younger brother Amar. They used to be very chubby uhhmm loved their chubbiness when they were younger but now they are very self concious of their outlook. Amar is more concerned about his looks so he does exercise etc but always weak in the knees when it comes to food..just like the Mama hehehe..

Amin, like the grandfather said means that we are ready to stop having kids..he is 12 going 13 this year and in Form 1 now..moving up in life and going into the phase of a teenager..but after saying all that he is one boy who really is very obedient and obliging..alas suddenly Aman was born. Atok said haaa...I though already amin now we have got Aman..who is now 10 going on 11 this year..the baby of the family. He is intelligent but very lazy..need to be pushed to study or do his home work.

Been working most of 20 odd years and have decided to call it quits. I was idling for a long while but decided to connect with my daughter, Farah through baking. She has the idea to do cupcakes for sale. We started way back in 2008..experimenting with colors, recipes and decorations..we moved on to do cupcakes in many ways/techniques, flavors and decorations. Went for lessons but can never get enough of taking them..

Enough of my ramblings for today..
