ENSAYMADA


Been rather busy today being Sunday, had Alya back from her school...n me having arranged for a Chinese seafood lunch at home. But bread was also another thing on my mind today..a must have..after all was thinking it would be great to bake some for my FIL who has been hospitalised since late last night because of suspected lung infections. Hospitals are definitely not my favorite place. I am absolutely stressed just thinking about it. So me being me..food food is my escape, and it makes me less stress to be baking and cooking..but the again how to loose weight uhmmm

I thought he would have enjoyed my Ensaymada..what a pity he was not even fully aware of everyone around alas my box of Ensaymada which was left unopened... however looking at the frail body of a man who once was someone everyone looked up to is very sad...wish to Allah Al Mighty to give him strength to recover and be himself again..Insyaallah.

The Ensaymada, a Filipino sweet pastry with a long history of its origin behind it, was from Rima's blog, Bisous A Toi..thanks for the recipe..totally loved it. I can't wait for it to be ready to have a bite.. it must be eaten warm as advise..heavenly soft, cheesy and sugary and all...original recipe from here

Ingredients

500 gm of high protein
100 gm of sugar
100 gm of butter
11 gm of instant yeast
1/2 tsp bread improver
4 egg yolks
225ml ice water
1/2 tsp salt

For filling:

1/4 cup sugar }
1/4 cup butter} mix both together
1 cup cheddar cheese - grated

Method:

1. Mix all dry ingredients together, except salt.
2. Add water and egg, mix well and knead till smooth;
3. Add butter and salt, mix well till dough is formed;
4. Knead the dough till texture becomes fine;
5. Put the dough in a bowl and cover for an hour.
6. Take the dough out of the bowl and cut the dough into 4 pieces Roll each piece into cylinders and cut into 50 gm pieces;
7. Flatten each piece and using the brush , paint the butter -sugar on the flattened dough. Only brush the middle part;
8. Sprinkle the cheddar cheese in the middle and then seal the dough by folding opposite directions and rolling until a long cylindrical shape is formed;
9. Start forming the ensaymada shapes by crossing the two opposite ends of the dough;
10. Place the dough in a baking tray with wax paper and cover with cloth. Set aside for 45 minutes.
11. Bake the ensaymada for 15 minutes ina preheated oven at 175 C.
12. Once ready, brush the Ensaymada with butter and dipped into sugar. Sprinkle some cheese over the Ensaymada..I did not though ..I forgot!!
13. Serve hot...enjoy.

Blueberry Cream Cheese Bun

BLUEBERRY CREAM CHEESE BUN

Ingredients :
1 egg
Approximately 200g lukewarm water (egg + water = 265g)
120g sugar
6g salt
5g bread softener
500g bread flour/high protein flour
20g milk powder ( pakai whipping cream)
5g bread improver
11g instant dried yeast
80g margarine
Blueberry topping

Cream cheese filling
250g Philadelpia Cream Cheese
60g butter
60g icing sugar
1 egg

Method
Cream all the ingredients for the filling till smooth.

Bread maker method :

1. Into the breadmaker pan, pour in the water and egg. Add sugar, salt and bread softener.

2. Top it with flour, milk powder, bread improver and instant dried yeast.

3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which takes about 1 1/2 hour or so.

4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 49 to 50g each.

5. Form each portion into a ball and arrange on a baking tray. Leave to rise for another 30 minutes or so.

6. Before baking, brush the dough with some fresh milk and use a scissor to cut the top of the dough.

7. Pipe some blueberry filling on top and cream cheese filling.

8. Bake in a pre-heated oven at 180c for 20 to 25 minutes or till golden brown.

9. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Non Breadmaker method:

1. Put everything into the mixer bowl except for the margarine/butter and mix well then put in the butter/margarine. Mix for about 15 minutes.
2. Then transfer dough to another bowl and let it rest for an hour till it rise.
3. Make balls of 50 gm and put in the baking tray.
4. Rest for 30 minutes.
5. Follow breadmaker step 6 to 9.

Zaraa..my grand daughter



Look at the cheeky face..isn't she adorable?? Her mummy put her sister's hat on her shaved head and one of those rare moments, she enjoys it and smiled..She is turning 6 months old this 19th November..her mummy cannot wait to start feeding her with baby foods..n wonder who has that chore of making them?? Has to be Tok Mama ( that is what she calls me)

ROTI NAIK PAHANG - RESIPI TOK MAK


After looking at Mamazieza's and MamaFami's roti naik, i get really worked about making one myself..hahaha..lucky thing it decided to come true..recently I have been throwing away my dough because it failed to rise to the occasion..uhmmm this bread is good and very soft even though we keep a small portion of it overnight ..a must try again very soon..

The original recipe comes from Tok Mak but I took it off Mamazieza and Mamafami's blog..hahah took both to compare notes..of how they make their..Mamazieza is the mixer version and MamaFami is the breadmaker's version. Thanks so much for sharing the recipe.

ROTI NAIK PAHANG......resipi Tok Mak.....

1 BIJI TELUR.
2 SUDU BESAR SUSU PEKAT MANIS.
3/4CWN GULA. (300 gm sugar)
2 SUDU KECIL IBU ROTI@MAURIPAN .
2 SUDU BESAR MARJERIN. } ( pakai minyak sapi instead)
1 SUDU KECIL SORTENING.}( pakai minyak sapi instead)
500 GM TEPUNG GANDUM CAP SAUH.mama guna cap Lily
300 ML AIR ..AIR NI DH DI CAMPUR SEKALI TELUR N SUSU MANIS JADI 300 ML AIR.
1 SUDU BESAR SUSU TEPUNG SEBARANG JER ( pakai 1 tbsp whipping cream)

Mama guna mixer biasa.. tak guna Bread Maker..
Masukkan semua bahan2 kecuali marjering dan shortening tu..
Uli sehingga agak-agak sebati masukkan majerin dan shortening.
Uli lagi sehingga nampak dia tak melekat di mangkok .. tp melekat juga di jari... hehehe

Bahagi doh pada 30 gm dan bulat2kan atau ikut laa nak buat macam mana pun.. ( I made 50 grams balls)

Selamat Hari Raya Aidil Adha



This is my Raya spread for Aidil Adha..eventhough my hubby why am I cooking so much food and we are not hajis yet, to begin with..Hajis r the ones who should be celebrating it more..for me Haji or not, I come from the state of Kedah where Raya Aidil Adha is a bigger celebration than Raya Aidil Fitri (at least in my thoughts) so I am adamant to cook my best for my kids and family members. My kids invited his friends..so it is more of a private big celebration hehehe..and I get to cook..n bake :)

Hubby hailed from Perak eventhough he was born in Singapore, so Rendang Tok is also a must have and so are Lemangs..uhmmm miss out on the photo of the Lemangs..this photo was taken after the kids had their breakfast..forgot to take the pix earlier..

Not forgetting my heritage, I am also for Ketupat..sadly I do not make these myself. I bought it off a friend..I wished I have been more concerned about the makings of these ketupats..my late mum was there and taken for granted that she will undertake the task of making them..now that she is gone..I am at a loss..
We, my family, eats ketupats with Serunding Daging (which I forgot to buy :( - forget about me knowing how to make them..) and also with beef curry but gravy is slightly thicker in consistency..I was too generous with my addition of water into my chicken curry so it is a bit runny :(


Lastly Munah's sambal ikan bilis.. for those who do not eat chicken and beef can have these but I add them to food to spice up the taste..

Desserts are my favorites too
