JEJARI BILIS

Resepi dan gambar d ambik dri FB Legacy Secret Trading. Original resepi dsini

Resepi Jejari Bilis
::Bahan2::
250gm tepung gandum
segenggam ikan bilis (dikisar halus)
1 sudu besar serbuk cili
1 sudu teh jintan manis
1 sudu teh jintan putih
sedikit air
1 biji telur
2 sudu majerin
Garam
Serbuk perasa
Daun kari (jika ada
::Cara Penyediaan::
1.Satukan tepung gandum, telur, bilis yang telah dikisar, jintan manis, jintan putih, marjerin, serbuk cili dan garam / serbuk perasa secukup rasa.
2.Masukkan air sedikit demi sedikit (jangan biar melekit). Adun hingga menjadi doh. Kemudian, canai hingga menjadi nipis.
3.Potong menjadi jejari halus. Ulang proses hingga doh habis.
4.Panaskan minyak dan goreng jejari hingga rangup bersama daun kari. Angkat dan toskan.
5.Sedia dinikmati.
(Boleh juga belitkan jejari pada ikan bilis dan goreng bersama ikan bilis)

CHURROS

churro, sometimes referred to as a Spanish doughnut, is a fried-dough pastry—predominantly choux—based snack. Churros are popular in SpainFrance, thePhilippinesPortugalLatin America (including Spanish-speaking Caribbean islands) and the United States. There are two types of churros in Spain, one which is thin (and sometimes knotted) and the other which is long and thick (porra). They are both normally eaten for breakfast dipped in hot chocolate or café con leche.


 Hehehe I had mine for tea with tea without sugar..mix sizes because I was trying out the consistency and ease to pipe it.

I made 2 recipes of the Churros. Two platefuls of Churros yum yumsss...my kids sat and finish the whole mountain of Churros within less than half hour..hahaha..I tried the original recipe, a bit difficult to pipe and fry..I adjust by adding more eggs to ease the piping of the dough into the frying pan. OMG it is in Malay and I forgot who and which blog I took it from..I think this from my FBfriend. Thanks anyway, made my dream come true :)

Ingredients for one recipe. I made double so I double the recipe.

1 cup of water
100 gm of butter
2 cups flour
1/2 tsp salt
2 eggs ( instead of 4 eggs I add 3 more to the dough, total 7 eggs)
1 tsp caster sugar
cinnamon powder**
caster sugar ( u can also use icing sugar if u want)**
** for coating the churros

Method:

1. Put the water and butter into the pot together with sugar and salt.
2. Let the water boil and melt the butter.
3. Add the flour bit by bit using a wooden spoon.
4. Stir till well mixed and the dough that leaves the side of the pot is formed.
5. Cool the dough for a few minute.
6. Put into mixer and add egg one at a time till smooth and shiny ( consistency to make cream puffs)
7. Heat the frying pan and pour the cooking oil.
8. Scoop into a piping bag with the star or 1M noozle and pipe the dough into the hot oil..
9. Fry till golden and take it out and put onto a paper towel to drain the oil
10. Prepare some caster sugar and cinnamon powder in a bowl. Toss the churros into the sugar cinnamon bowl, shake the bowl to ensure the churros is covered with the sugar and put on the serving plate.

P/s:
at 4 eggs with 2 recipes - the churros is a bit tough to pipe but crunchy when fried.So the number of eggs added depend on how crunchy/soft u want the churros to be. I ended with 7 eggs but the churros swelled up a bit.
     
Original recipe in Malay.
1 Cawan Air
100G Mentega
2 Cawan Tepung Gandum
½ Sudu Kecil Garam
2 biji telur
1 sudu kecil gula kastor
sedikit serbuk kayu manis

Cara-Cara Menyediakan  Churros aka Kuih Belimbing:
Tuangkan air dalam periuk dan masukkan mentega, gula & garam.
Biarkan sehingga air mendidih dan mentega cair.
Masukkan tepung sedikit demi sedikit dan kacau rata menggunakan senduk kayu.
Kacau perlahan-lahan dan sekata sehingga adunan tidak melekat pada periuk.
Tutup api dan biar adunan sejuk seketika sebelum dimasukkan talur.
Kerana jika adunan panas, telura akan masak dan churros tidak mengembang
Panaskan minyak.
Masukkan adunan ke dalam piping bag dan guna nozzle bintang.
Paipkan kedalam minyak panas.
Goreng sehingga kuning keemasan.
Angkat toskan minyak.
Gaul bersama gula kastor dan serbuk kayu manis
Enak juga dihidangkan bersama strawberi dan sos coklat.

CUCUR BAWANG CRABSTICK

Ada terbaca dalam FB tentang resepi ni..yg saya rasa is good..semua orang suka cucuq kodoq udang, cucuq kodoq ikan bilis ..ini membuka satu lagi idea yang bagus. Anyway, dah buat banyak kali dah..semua anak2 saya suka makan nya, lagi la musim hujan ni..

500 gm tepung gandum
1 tsp baking soda ( I tambah)
1 biji bawang besar, di mayang halus
1/2 kuib stock ikan bilis
10 batang crabstick, di potong2 kecil
Daun bawang, dipotong2 ( klu ada)
1 biji telor
Garam secukup rasa
Air secukupnya
Minyak untuk menggoreng*

Caranya

Gaul semua sekali (selain yang bertanda *) dalam satu mangkuk yang besar dan tambah lah air secukupnya .
Panaskan minyak dan goreng macam kita goreng cucuq ikan bilis tu..

CRABSTICK SNACK

Salam...ni entry dah lama buat and habis d makan..tapi duk nak upload asyik lupa. Terima kasih kepada QaseyHoney.blogspot.com for this recipe..original dari : Kak Sasha@tested& tasted recipes by sasharahmat & Kak Tina@Wind of Chance.
Sungguh lah sedap sangat but a little bit leceh to do but makan the very the cepat abis..hehehe
Sampai sekarang belom berani buat..last time I buat sampai hubby makan atas katil sambil tgk TV atu terlena sambil makan..bertabur kat bantai...bad idea makan ata katil niii.

Bahan2
filamen crabstick secukupnya - disiat2 memanjang & ketepikan
minyak untuk menggoreng

Bahan A
1/2 cawan (secukupnya) tepung beras
sedikit perasa ''secukup rasa"
sedikit garam
sedikit lada sulah

Daun kari 
****satukan semua bahan A.

 Cara2
di dalam mangkuk besar, masukan filamen crabstick yg telah disiat2 tu,
masukkan tepung semua bahan A.
seratakan semuanya dan boleh lah digoreng (deep fry method) hingga kekuningan

POPIAH BASAH



Resepi Rina Khan ni from Face Book.

I did not make my own popiah skin. I was using store bought ones and these come from Tesco. In a hurry, I did not read the instruction on the package, the popiah skin should first be steamed..uhmm I used it without the steaming process so it is a little bit tough but tolerable..above is the end result..not bad looking eh??

Bahan untuk inti*
1/2 biji kobis - diricih halus
3 biji sederhana besar carrot - disagat halus
1 biji sederhana bawang besar
3 ulas bawang putih
1 sudu besar sos tiram
1 sudu makan udang kering
garam secukupnya

minyak untuk menumis
**Blend bawang besar+bawang putih+udang kering. Panaskan sedikit minyak dan masukkan bahan blend tadi. Kemudian masukkan sos tiram + garam. Kemudian masukkan sayuran dan masak hingga layu.

Bahan untuk sambal***
15 tangkai cili kering
1 biji bawang besar
5 ulas bawang putih
1 sudu besar gula perang
2 sudu besar kicap manis ( I added honey as directed by Reen)
minyak untuk menumis
garam, perasa dan bawang goreng secukupnya

*** blend cili kering+bawang besar +bawang putih.
Panaskan sedikit minyak dan tumis bahan blend hingga garing. Masukkan kicap dan gula perang + garam dan perasa.

POTATO TARTS











I made them after looking at MamaFaMi upload her potato tarts on the FB..owhhh got me hooked on the tart so I decided to try the recipe. I copied and paste the recipe as enclosed

Ingredients :
 5 medium sized potatoes - cleaned and grated
1 medium carrot - cleaned and grated
1 onion - diced
chopped spring onion
4 pieces crabstick - cut to small pieces
1/4 cup fresh milk
3 large eggs
enough grated Mozzarella cheese
enough salt
enough whitepepper
2 tablespoons cornflour

Method :
1. Place the grated potato and carrot into a big bowl and mix well. Squeeze the juice out. Add diced onion and mix well.
2. Beat eggs and add milk. Stir and pour into the potato mixture. Add spring onion, crabsticks and a handfull of cheese. Stir to mix well.
3. Grease the muffin pan with a bit of margarine. Spoon the mixture till full and sprinkle with more cheese.
4. Bake in a preheated oven at 190 C for 20 minutes or till cheese turned to golden color.
5. Remove from oven and serve hot with your choice of sauce or nice to eat on it's own. The choice is yours. Enjoy!

11th day Ramadhan


hahaha...nk tergelak kita dah jauh ke hari 19 and I am still updating my 11th day Ramadhan..xpe at least I get to reminisce and enjoy tengok the food again..re-live the day..
11th is a Thursday and was my twins 16th birthday, they are non identical twins..how time flies..they were so small and now owwhhh..extra large..but I loved them so much..Happy Birthday Amir and Amar..

Since hubby was busy, we stayed home for the birthday and I made the following for Iftar..

SIAKAP BAKAR BEREMPAH HARUM

Tima kasih - resepi best but mine as usual x ler se merah and garang cam dia orang buat :( but i guess I tone down on the chili ..) but still sedaps..so I copy and paste saja dari K.Nor nyer blog..

Bahan-bahan :
1 ekor ikan siakap (dibersihkan) ~ k.nor guna ikan pari
1 helai daun kunyit (diracik/dihiris halus)
2 helai daun limau purut (diracik halus)
bahan-bahan dikisar bersama :
3 biji bawang merah
2 ulas bawang putih
1 batang serai
1 helai daun limau purut
3 kelopak bunga kantan (dihiris terlebih dahulu)
1 sudu makan cili giling (boleh ganti dengan cili api jika suka)
1 sudu besar rempah kari ikan
3 sudu makan air asam jawa
1 sudu besar kicap pekat
sedikit belacan bakar
1 inci halia
1/2 inci lengkuas
gula dan garam secukupnya
sedikit air

Cara-cara :
Panaskan minyak secukupnya di dalam kuali. Tumis bahan-bahan kisar hingga terbit bau. Tutupkan api.
Sementara itu, sediakan kertas foil dan dulang pembakar. Letakkan ikan di tengah-tengah kertas foil. Tuangkan kesemua perencah tadi di atasnya. Taburkan hirisan daun limau purut dan daun kunyit dan balut dengan kemas. Perapkan sebentar lebih kurang 15 minit.
Kemudian bakar ikan sehingga masak.


Kancang panjang goreng with sambal udang bercili...(Tean's Gourmet Cripy Prawn Chilli)..u can buy it at Tesco..(free iklan pulakss)..
Ni permintaan ramai, bell pepper tempura...we also have terung and mushrooms tempura..entah mana pulaks gambaq dia..
Ni pulak ruper my ayam goreng berempah...ni resepi dia..again I ambik dri blog K Nor, tima kasih..sedaps :)
AYAM GORENG BEREMPAH BERIANI
resipi : Dayang Jack

Bahan-bahan :
1 ekor ayam saiz sederhana (dipotong dan dibersihkan)
2 tangkai daun kari
2 sudu besar tepung jagung
2 sudu besar rempah beriani
1 sudu besar rempah kari ikan
1 sudu besar rempah kari daging
1/2 sudu makan serbuk kunyit
1/2 sudu besar serbuk cili
sedikit air sejuk (jika perlu)
garam dan gula secukupnya
perahan jus limau nipis ~ k.nor tambah - I x tambah pon..

Bahan-bahan kisar :
6 batang serai
6 biji bawang merah
1 inci halia
4 ulas bawang putih

Cara-cara :
Gaulkan ayam bersama semua bahan di atas dan perapkan 1 jam atau semalaman (simpan dalam peti sejuk).
Sediakan minyak untuk goreng terendam. Apabila sudah cukup panas, gorenglah ayam hingga masak keemasan.
Hidangkan bersama nasi putih atau apa-apa sahaja jenis masakan nasi.

For savory kuih..alaaa finger food laks..I read somewhere jugak about the resepi..so easy peasy for orang malaih cam I niii....so resepi nyer senang saja...just take piece of popiah skin and wrap around the crabstick..and goreng...dah jadi ponn..good afternoon snack for kids..
I made profiteroles..yeah profiteroles..indeed..brings me back memories of Marks & Spencer's profiteroles..used to buy and enjoy it on my own....so soft and the pastry cream so luscious and the chocolate topping owhhh to die for..mine ni a bit crusty..pastry cream was good but x kena entah rasa not so good..I took the resepi from Joy of Baking or sumting but maybe I x pandai buat kot..

Also made air amra with asam boi..compliment from Nariman who gave me the fresh amra from her house..best bangats..thanks dear..

Pincuk Buah Ste


Haaa....introducing buah2an tempatan dari Alor Star, Kedah. My friend Rosnah Mahmood found it at the Simpang Kuala morning market..love her for that..I have forgotten how nice to eat these fruits. My late dad always klu jumpa some of these, x banyak 1-2 pieces pon he will definitely bring them with him when he comes to my house..

This is buah Ste ( pronounced seteh) ..is bigger than buah Stoi, same species but smaller in size. I placed a grade A egg just to show u the size of the fruit. You can eat the fruit as it is but must remove the outer rough layer of the skin. Nice when u sprinkle some salt over it..

Another way, the way my late mum used to make them..my favorite..finger licking and head scratchingly hot..wickeddddd..but yummmyyyyy..

All u need is the following:

2-3 pieces of Ste (washed and peeled the outer skin, use the knive and make groves on the flesh and placed in a salted water solution)
10 pieces dried chilli
1 inch belacan
4 tbsp sugar
4 tbsp soya sauce
1/2 cup of peanuts (roasted and roughly pounded)
1/4 cup dried shrimps (roasted and pounded)

Pound the dried chillies , belacan and sugar till well mixed. Tranfer to a large bowl, add the pounded peanuts, pounded dried shrimps, the soya sauce and lastly the fruit. Break the fruit into pieces and mixed well and serve....

SARDINE ROLLS

Got the recipe off FB..one of my baker friends who tried the recipe . Tried the recipe and it is good..sedap..I copy and paste the recipe Source : Nazian Nasir via Galeri Aneka Resepi

INGREDIENTS FOR FILLING :

1 small can of sardine in tomato
1 onion - diced
2 cloves garlic - minced
1 tablespoon chillie paste
1 fresh red chillie - chopped
sugar and salt to taste

Method :

1. Heat a bit of oil in a wok. Add in garlic and fry till fragrant.

2. Add in chillie paste and continue stirring. Then add in diced onion and chopped fresh chillie.

3. Add in sardine together with the sauce. Cook till the sauce is slightly dried. Add in salt and sugar to taste.

4. Stir well and remove from heat. Leave to cool.

INGREDIENTS FOR THE SKIN :

3 cups flour

1 teaspoon instant dried yeast (Mauripan)

1 egg

2 tablespoon cooking oil

1/2 cup chilled water

1 teaspoon salt

1 tablespoon sugar

'GLUE' : Add a bit of water to 1 teaspoon flour to form a thick paste

METHOD :

1. Mix yeast and sugar to 1/2 cup of water. Stir well and keep aside.

2. Place flour in a big bowl. Add in egg, oil and salt. Mix well. Pour the yeast mixture a little at a time till a soft and smooth dough is formed.

3. Divide the dough into a 25g balls.

4. Roll thin each dough. Place a bit of filling on top and roll tight. Secure using the 'glue'. Repeat the procedure till all the dough are used up. Arrange on a tray dusted with flour.

5. Heat oil in a wok and fry the rolls till golden brown. Remove the rolls from the oil onto a kitchen towel. Ready to serve.
