HOME MADE SARDINES

Ni homemade can sardine. Resepi dan gambar di ambil dri FB. Link d sini

bahan-bahannya :
1 kg ikan selayang/ sardin segar.
2 labu bawang besar dipotong dadu
5 ulas bawang putih kisar.
2 biji Buah tomato didadu kasar
1/ 2 cawan tomato puri.
1/ 2 cawan tomato sos
Kalau nak pedas tambah sedikit sos cili.
Gula dan garam secukup rasa.
Setengah cawan minyak.
1 sdt Serbuk lada putih.
Air secukupnya ( 1 jug, masuk sedikit demi sedikit)
Periuk Pressure Cooker ( saya guna noxxa).
Cara-caranya :
1. Panaskan minyak. Tumiskan bawang putih dan bawang besar sampai wangi.
2. Masukkan tomato buah, tomato puri, tomato sos dan cili sos.
3. Masukkan air dan ikan. Tambah garam dan gula.
4. Masak menggunakan pressure cooker 30 minit.
5. Tambahkan air jika perlu. Dan masak lagi 20-30 minit. Tambah air sedikit demi sedikit lagi. Biarkan kuah pekat dan ikan benar- benar lembut isinya.
Sedia untuk dihidangkan dengan Nasi Putih.. Sedap wooo..
ALHAMDULILLAH.
Tambahan :

Nak perah limau nipis pun boleh, kalau nak hilangkan hanyir.
Nak tumis dengan cili kering kisar pun boleh untuk pedas.
Nak tambah daun kari pun boleh.
Ada juga orang tambah tepung gandum untuk pekatkan kuah.
Nota : Dajaj Maksudnya : Ayam dalam kamus Marbawi

FISH AND CHIPS NIGHT






LAKSAM MY WAY...


Was going through some recipes last night and suddenly I came across the laksam..OMG it has been sometime since I made them...so here it is and I enjoyed it to the max..

For the laksam

Beli jer chee chong fun yg kat supermarket or use koay teow if u cannot find the chee chong fun

Celur with hot water and toss. For the CCF, potong bulat2 about 1 inch in length or suka ati lah.

For the gravy:

2 bjij bawang besar
2 biji bawang putih
2 tin tuna chunks
halia 1 inch
santan kotak M&S - 250 gm
3 keping asam gelugor
tangkai bunga kantan - potong2
1 kiub stok ikan bilis
garam dan gula secukupnya

Blend the first 4 items on the list and pour into the pot. Add water to make the gravy.
Add asam gelugor, bunga kantan
Let it boil and add santan then simmer for 10 minutes on low fire.
Add kuib stok, garam n gula to taste.
Simmer another 10 minutes and dah jadi..

For the topping

5-6 strings of kacang panjang dipotong bulat2
1 biji bawang besar di potong nipis
daun kesom
taugeh
bunga kantan - d ptong bulat2

For the sambal

Cili merah dan sm cili padi
belacan
garam n gula
asam limau

Blend the cili, belacan then add garam, gula and limau nipis to taste.

Assemble as above..

Walaaaa.....isn't it easy...ENJOY

BUTTER SALMON

Hahaaa....I had these 5 pieces of Salmon in my freezer for quite some time now.. I thought I want to make otak2 but never seem to get round to doing it. Until the day I decided to make this dish. No regrets except that probably I need to hold the oil a bit because salmons are themselves a little oily...of course my recipe is for the many mouths in my house..

Bhn²
5 keping ikan salmon- d potong2
2 tangkai daun kari 
4 biji cili hijau/ cilipadi - d cincang
60 gm mentega ( Boleh d tambah jika hendak kuahnya bersalut banyak kat salmon tu)
1 biji bawang besar _ d cincang
Tepung jagung secukup kegunaan
Minyak untuk menggoreng
Sedikit gula

Bhn² Perap
1/2 tsp stok ikan bilis
2 tsp gula
1 biji telur
1 tbsp tepung jagung
1/2 tsp serbuk kasar lada hitam
1/2 tsp serbuk lada putih
Garam secukup rasa


Cara²
Salmon d gaul bersama bhn² perap dan perap selama 20 minit.
Saluti salmon tadi dengan tepung jagung.. Goreng.. Setelah salmon masak angkat dan ketepikan.
Cairkan mentega dan masukkan bawang besar, daun kari dan cili padi.. Tumis sehingga naik baunya.
Kemudian masukkan salmon dan gula.. Gaul sebati.
Angkat dan hidang.

SIAKAP GORENG

Salam...this dish was done ages ago..this is a family favorite too. Easy for the kids and also this is ala Chinese food which is a family favorite. Normally we fry a hole siakap but today I told my maid to cut the siakap into two instead. One half for lunch and the other for dinner...hehehe


This dish is easy peasy ..all u do first cut the fish into two or u might want to fry it whole. Clean the fish and marinate it with salt and turmeric powder.

Heat up the pan and add oil for frying. Fry the fish till golden brown. Once done, put it on a serving dish. Pour light soya sauce on it ( not too much, it will become salty) and drizzle with daun ketumbar ( chinese parsley) and serve with hot rice....yumsss..

Buka Puasa 14.8.2012

This is a week before Raya....getting to be more and more tired of eating an elaborate dinner..hehehe and the  menu i getting shorter and shorter..

Menu for the day:

a) Stuffed tofu;
b) Fish head curry;
c) Ayam masak pedas;
d) Kangkong goreng belacan;
e) Assorted kuihs ( from the Bazaar)

BUKA PUASA 7.8.2012

This is the 18th day Ramadhan berbuka spread. e are getting more and more tired of rice and dishes already.
Saw some reasonably good sized crabs at reasonable price at Tesco so I bought some.

Menu for today:
a) Sweet and sour crabs;
b) Kerabu ayam dan taugeh;
c) Stir fry broccoli;
d) Ayam masak itam;
e) Fried fish;
f) Terung bulat masak pedas
g) Fruit platter
h) Tepung pelita
i) Ice lemon tea, Iced coffee

STEAMED CURRIED CUSTARD WITH FISH aka OTAK2

The actual recipe comes from Three Hungry Tummies and I have amended to suit my Kedah taste. Anyay, my late mum used to make these for us but it is more elaborate than this recipe so I marry the recipes accordingly. Today I cannot find any good fish and also I was rather tight in terms of time management therefore I bought salmon steaks and some prawns for this dish. Turn out quite well and loved by my household..( surprise..surprise)



600 g of white fleshed fish, cubed ( Salmon cut into pieces and about 10 large prawns)
3 kaffir lime leaves, finely shredded
3 bird chillies, julienne (did not put this for the benefit of the kids)
6 tbs of coconut cream, whipped (also did not put this)
6 pakchoy or Chinese cabbage leaves, tender parts only ( I used roman lettuce instead)
1/2 cup of Thai basil (did not use these too)

for the curried custard;
4 eggs ( add extra 2 eggs)
10 tbs of red curry paste ( I don't have these at home)
12 tbs of coconut milk
4 tbs of fish sauce
6 kaffir lime leaves, chopped
3 tbs of palm sugar ( add normal sugar but halved it)
4 tbs of corn flour

2 lemongrass
1 inch of galanghal **
3 garlic **
1 onion **
2 tbsp of cili paste **

P/s what i added is to replace the red curry paste.

Place all custard ingredients in a food processor/blender and blend til well combined.
Line bowls or ramekins with pakchoy leaves then add in Thai basil and fish pieces. You can of course use a large bowl for this.Pour the custard mixture over. Use a spoon to make sure fish pieces are well coated with the mixture.
Steam for 30 minute on very gentle heat (you will end up with tough custard and fish with rapid boil)
Spoon 2 tbs of whipped coconut cream and scatter some julienne kaffir lime leaves and chillies over.
Serve immediately as part of a Thai meal.
Tender juicy fish coated with fragrant soft curried custard.

Buka puasa on the 1.8.2012

Wooww...good morning everyone.. it is already almost 2 weeks that we have been fasting. How time flies..
Look at my darling grand daughter Sarah..she had and is still having chicken pox ..her mum doused her with calamine lotion to prevent her from scratching herself..what a sight but I am quite thankful that she had it now rather than nearer to Syawal..




Main table look spare today..tired of making lots of dishes hehehe.
Anyway, my buka puaa menu for today is..oopss I got the order of the picture of the food upside down :

a)  Karipap Sardin ( watch for the recipe later)
b) Bread Pudding and vanilla sauce ( watch for the recipe later too - good)
c) Long bean stir fried in soya sauce
d) Air asam for the fish
e) Ikan bakar - Talapia and Siakap
f) Orange, Soya bean drinks

Buka Puasa 28.7.2012


This was Saturday 21 st July's buka puasa...we had a visitor joining us for buka ie. Alya's friend, Alif..uhmmm look at Zaraa's facial description...now she understands that posing for a camera is something exciting...she'd make her normal hand gesture..requesting to look at the picture on the camera..

We had ala kampung fusion food..misguided I might say..is today..when u read below then u would realise the dishes do not compliment each other. What was I thinking about...OMG, my menu planning is down the drain today..

a) Patin masak tempoyak ( 2nd try this week)
b) Sayur asam ubi keladi;
c) Mango kerabu;
d) Tempe and tauhu goreng;
e) Ayamas chicken wing;
f) Sagu with kelapa;
g) Lompang;
h) Blotok;
i) Tepung pelita ( Farah bought these)
j) Watermelon juice;
k) Soyabean
