GREEN CHUTNEY

Served with Tandoori Chicken
Recipe for Green Chutney

1 small bunch of cilantro ( daun ketumbar)
1/4 cupMint Leaves 
1 clove garlic
1/4 inch ginger
2 small green chilies, seeded
3 tbp of yoghurt
2 tbsp lemon juice
salt to taste

Wash the cilantro and mint leaves. Drain well.
Blend everything together in a mixer until u get a smooth paste.
Adjust the salt and lemon juice.
Serve immediately.

DINNER TONITE

 Today was a special day, we had our school 90th school reunion...will take about it later.
 After a long day and all the excitement ..I came back and was really tired..so climb into bed and have a snooze...a very good snooze I might say. Came down for tea..woww  my maid sometimes wows us her Masterchef skills( from watching the series) lempeng and sambal ikan bilis..rest for a bit then prepare for family dinner .. a late one a I started preparing at about 730 pm.

Tried a new roast chicken recipe , made Yorkshire puddings, cauliflower salad, Ceaser's salad and the gravy for the chicken. Simple yet enough to fill the hungry stomachs.

The family dinner spread


 Caeser's salad

2 heads Local Romaine salad , clean and cut into smaller pieces
1 red bell pepper, cut into strips
1 avocado, cut into pieces
Homemade croutons**

Mix all the above together, spoon the salad onto the plate and drizzle with Ceaser's salad sauce. 
P/S : put the croutons into the salad and mix the salad just before serving.

I made my own Ceaser's salad sauce ( my version of what I think the dressing should taste)

3-4 tbsp Heinz Balsamic Vinegar
4 tbsp Mayonaise
2-3 tbsp Olive Oil
2-3 tbsp Water
1 tbsp lemon juice
Black pepper , sugar and salt 

I put everything in a clean bottle and close the lid. Give it a few shake..Done..yumss..

**Home-made croutons -  brush melted butter or olive oil to both sides of the bread. Cut up into small pieces and put them on a baking tray. Back at 180 C for 10 min or till golden brown. take out and cool.

Cauliflower Salad

1 head of cauliflower, cleaned and cut into florets
a bunch of coriander leave
1/4 cup shredded cheddar cheese
1 tbsp lemon juice
3 tbsp mayonaise
Black pepper, salt and sugar to taste

Boil some water enough to submerge the cauliflowers. When the water is boiling, put the cauliflower in for a minute or two and toss. Put aside to cool.
Once cooled, put all the ingredients in a bowl and mix well.
Put in the fridge till ready to serve.

Yorkshire Pudding

Roast Chicken

"This is a very flavorful and simple way to roast a chicken. Recipe inspired by Barefoot Contessa."
Ingredients
1 whole chicken
1 bunch thyme ( I used rosemary)
1 lemons, quartered
1 head garlic, halved
2 tablespoons melted butter ( I used olive oil)
salt
pepper

Directions
Preheat oven to 425 degrees.
After removing giblets (discard or save for another recipe), salt and pepper inside of chicken.
Stuff the cavity with rosemary, lemon quarters and garlic halves.
Brush the outside of the chicken with olive oil.
Salt and pepper outside of chicken.
Tie the legs together with string (good idea to soak string in water prior so it won't burn in the oven) and tuck the wings under the body.
Cook in oven for 1 1/2 hours or until done.


(hehehe cannot find any strings to tie my chicken...so I got some ribbons from some bunga telur lying around in my cupboard and use them..perfect)

GREEN CHUTNEY


This green chutney compliments the Chicken Tandoori. 

    Cilantro - 1 small bunch
  Mint leaves - 1/4 cup
 Garlic - 1 clove
  Ginger - 1/4 inch
Green chillies - 2 small , seeded

Lemon juice - 2 tsp or to taste
Salt - To taste

Buka puasa 4.8.2012

Alhamdulillah..
we are already more than half way through our fasting month..today I am very happy because I have done part of the work the night before for today's meal so I am more relaxed in making the rest of the meal. Most of my kids are at home and it really pleases me when we have everyone at the table. All the hard work of preparing the meal is gone when I see the faces around the table.
The table today looks very forbidding ..full to the bream with food and heavy too..
We visited Father in Law today, Alhamdulillah he is ok and he smiled at us..owhh very happy to see him beaming at us. Pity he cannot eat any solid food..Hubby bought some flat breads and he still insist on Beryani.. wokey, lucky I have ample time to do everything on time.

The buka puasa menu is :

a)  Nasi Beryani
b) Tandoori Chicken
c) vegetable Curry
d) Garden Salad
e) Tomato cucumber salsa
f) Chutney for the Tandoori Chicken
g) Flat breads
h) Fresh fruit with ice cream.

Hari Ke 2 Ramadhan


Ni haaa hari kedua Ramadhan..tengok tu memacam di masak hari ni..mesti hari rajin nihhh :)
Kesian semua anak2 berpuasa dan hati ku teringat yang di hostel jugak..apa laa depa2 makan. Anak yang pompuan kat SMT Gombak, sian dia kata dia..semua lauk dan nasi dh siap d hidangkan jam 6 petang..imagine nak makan jam 730 mlm..apa laa rasa berbuka dengan hidangan sejuk...uhmmm..I make it up to them on weekends lah nampak gaya nyer.


Ni Udang celop tepung I, entah apa jadi rupa dia pulaks but taste sedap and rangup. I ambik resepi dari blog..tapi dah x jumap lak resepi nyer and dari blog sapa :( ( nanti I try to cari dalam kertas resepi I)

Yang ni lak Daging bakar dan air asam siam...haaa ni mengingat zaman2 kecik2 dulu lah niii..I selalu tengok arwah mak memerap daging ni....( tengok saja yerr x buat apa2 hehehe)

Arwah mak buat marinade dia macam buat satay tuu..I pon main campak2 jer x ingat betui2 sangat depending on berapa berat lah daging tu..resepi nya (agak2 jer lah)

Bahan-bahan:
Daging - batang pinang laa yang best, kalau dapat
Bawang merah
Bawang putih
Jintan manis (ni I always confuse myself between the two jintans)
Serbuk kunyit
Garam and gula secukup nyer

Blender semua bawang and jintan manis tu, campor serbuk kunyit, garam and gula lepas tu perap lah at least sejam..lagi lama lagi sedap lah.. atu I bakar in the oven for about an hour on 200 C lepaih tu panggang lak about +- 10-15 minutes bagi dia cam bau terbakaq sikit..atu dah rehat kan sekejap daging tu. Potong lah dan cicah dengan air asam..yum yum..
Resepi air asam thai ni I ambik dari buku, Hidangan Kegemaran dari Dapur Tunku..sedap sangat lah..

Bahan -bahan

15 tangjkai cili kering
6 ulas bawang putih, dikupas dan di potong menyerong
10 gm asam jawa yang di ramas dengan 50 ml air dan di tapis airnya
garam dan gula secukup rasa
30 ml kicap
30 ml minyak masak

Panaskan minyak dalam kuali. Goreng cili kering sehingga garing, angkat dan biar sejuk.
Dengan minyak sama, goreng bawang putih sehingga keperang- perangan, angkat dan biarkan sejuk.
Tumbuk cili kering dan bawang putih goreng yang dah sejuk sampai lumat.
Bancuh garam, air asam jawa, gula dan kicap pekat dengan bahan2 yang d tumbuk tadi.
Tabur sikit hirisan cili hijau dan cili merah sebagai hiasan..(ni ikut suka lah ya..I x boh pon)

Kari ikan genahak nii...saya orang Kedah so gulai laaa kena pecah minyak atau berlenang minyak baru laaa gulai tu nampak sedap..bolih lah pakai resepi kat sini
Ni pulak sayur chap chai my style...depending apa ada dalam fridge masa ni..with soohoon and pucuk..sedap jugak for a change..

Lastly for dessert, I buat tepong pelita, xde lak gambaq dia :( sebab dia duk dalam fridge bagi sejok la konon nyer..langsung lupa ...and this is the savory dessert Cheesy Beef Bingka..haaa ni a "must try" sedap sangat..but even for a large family, dengan juadah yg jenuh tu.., rasa nyer klu nak buat lagi kena buat setengah resepi..dia padat dan mengenyangkan..selepas mengadap nasi nak makan ni dah x larat, or sebalik nyer..tima kasih kepada blog Noreen-Homecooking.blogspot.com untuk resepi ni...ni I copy and paste saja lah dari my private collections of resepi.

Cheesy Beef Bingka/Bingka Daging berlauk

Bahan-bahan:
Bahan2 A:
250gm tepung gandum
600ml santan
100gm mentega cair
5 biji telur
1 camt garam

Bahan2 B:
200gm daging cincang - kalau nak guna ayam pun boleh ikut suka masing2
1 camt jintan putih
1 camt serbuk lada sulah
secubit garam
sedikit oregano

Bahan2 C:
100ml santan
50gm keju cheddar parut
1 camt tepung gandum

Bahan2 hiasan:
5 batang cili merah - dihiris
daun bawang dan daun sup - dihiris
bawang goreng

cara:

1. alaskan loyang saiz 9"x9" dengan aluminium foil dan sapukan dengan sedikit mentega. ketepikan

2. Bahan2 B: kisarkan jintan putih bersama2 dengan serbuk lada putih sehingga halus. kemudian panaskan kuali, tumiskan bahan2 kisar dan masukkan daging cincang bersama2 dengan garam dan oregano. kacau sehingga daging bertukar warna tetapi jangan sampai terlalu kering nanti bila bakar tak cantik. biar berminyak sedikit. ketepikan

3. Bahan2 A: masukkan kesemua bahan2 A ke dalam blender dan kisarkan sehingga sebati. kemudian tapiskan ke dalam mangkuk tahan panas. masak di atas api yang sederhana sehingga naik wap. proses ini hendaklah sentiasa dikacau supaya adunan tidak menjadi keras. tutupkan api

4. cara membakar: tuangkan Bahan2 A tadi ke dalam loyang dan taburkan separuh Bahan2 B ke atas Bahan2 A dan bakar pada suhu 180C selama 30 min atau sehingga masak

5. sementara menunggu bingka masak bolehlah di sediakan bahan2 C

6. Bahan2 C: masukkan kesemua bahan2 C ke dalam mangkuk tahan panas dan kacau sehingga ianya sebati dan pekat. matikan api dan ketepikan

7. setelah bingka tadi masak bolehlah di tuang dan ratakan bahan2 C tadi ke atas bingka dan taburkan lagi separuh bahan2 B. akhir sekali taburkan bahan2 hiasan dan bakar lagi selama 5-10 min

8. setelah masak bolehlah dikeluarkan dari oven

9. potong dan hidangkan panas2

Spicy ginger and chilli bean sauce

Very good indeed. Made this coupled with the Hainanese Chicken Rice Thai style, again from 3 Hungry Tummies..I love the blog..thanks again..

Next time I make them, I will add more of the bird chillies as it is quite mild to us..hehehe but my kids love it very much..

I just copy n paste the recipe again..

makes 1 cup
you'll need;
6 coriander roots, scraped and chopped
6 garlic cloves, peeled
5 cm knob of ginger, chopped
4 tbs of white sugar
6 bird chillies, chopped
4 tbs white vinegar
4 tbs of soya bean paste, mashed
4 tbs of light soy
4 tbs of dark soy
1/4 cup of chopped coriander leaves
salt and white pepper to taste

method;
Pound coriander roots, garlic and ginger with a pinch of salt into a paste. Add the rest of the ingredients and mix well. Check for seasoning. It should taste salty, sweet, spicy, sour and garlicky.
