Atik is 19

oooohhh...my son Atik Zaki Ridhwan is coming to be 19 on the 30 January 2012.. celebrated his birthday earlier because he has to be back at college today. So we as parents uhmm even though the child is turning 19, he is still our baby. How time flies....I have mixed feelings..happy that he has grown up to be what any parent would dream their kids to be..sad that soon he will finish college and start his own family and owhh out of my nest..under my wings no more..(misty eyed)..whatever it is I loved you very much son..Happy birthday..and to the rest..I love all of you as much and hope u all will follow your brother's footstep...muaaahhh..

POTATO TARTS











I made them after looking at MamaFaMi upload her potato tarts on the FB..owhhh got me hooked on the tart so I decided to try the recipe. I copied and paste the recipe as enclosed

Ingredients :
 5 medium sized potatoes - cleaned and grated
1 medium carrot - cleaned and grated
1 onion - diced
chopped spring onion
4 pieces crabstick - cut to small pieces
1/4 cup fresh milk
3 large eggs
enough grated Mozzarella cheese
enough salt
enough whitepepper
2 tablespoons cornflour

Method :
1. Place the grated potato and carrot into a big bowl and mix well. Squeeze the juice out. Add diced onion and mix well.
2. Beat eggs and add milk. Stir and pour into the potato mixture. Add spring onion, crabsticks and a handfull of cheese. Stir to mix well.
3. Grease the muffin pan with a bit of margarine. Spoon the mixture till full and sprinkle with more cheese.
4. Bake in a preheated oven at 190 C for 20 minutes or till cheese turned to golden color.
5. Remove from oven and serve hot with your choice of sauce or nice to eat on it's own. The choice is yours. Enjoy!

Pizza Nite


Tonite is pizza nite again...made 10 pieces of these pizzas but we only finished half hehehe now everyone is very conscious about health.

These are topped with black pepper sausages, crab sticks, black olives, capsicums and button mushrooms topped with mozzarella and cheddar cheese.

SAVORY CHEESE MUFFINS




Sedap bukan tak sedap..

Ingredients:
1 packet of basic muffin mix
3 Black Pepper sausages - diced 
1 stalk of salary - sliced thinly
1 onion - quartered 
5-6 button mushrooms - fresh or canned
1/3 cup cheddar cheese
1/3 cup of mozzarella cheese for topping 

Method

1.  Mix the ingredient for the basic muffin;
2. Add the black pepper sausages, onions, celery , mushroom, cheddar cheese 
3. Pour into muffin tin or liners and topped with mozzarella cheese
4. Bake at 180C for 25 minutes.

ENSAYMADA


Been rather busy today being Sunday, had Alya back from her school...n me having arranged for a Chinese seafood lunch at home. But bread was also another thing on my mind today..a must have..after all was thinking it would be great to bake some for my FIL who has been hospitalised since late last night because of suspected lung infections. Hospitals are definitely not my favorite place. I am absolutely stressed just thinking about it. So me being me..food food is my escape, and it makes me less stress to be baking and cooking..but the again how to loose weight uhmmm

I thought he would have enjoyed my Ensaymada..what a pity he was not even fully aware of everyone around alas my box of Ensaymada which was left unopened... however looking at the frail body of a man who once was someone everyone looked up to is very sad...wish to Allah Al Mighty to give him strength to recover and be himself again..Insyaallah.

The Ensaymada, a Filipino sweet pastry with a long history of its origin behind it, was from Rima's blog, Bisous A Toi..thanks for the recipe..totally loved it. I can't wait for it to be ready to have a bite.. it must be eaten warm as advise..heavenly soft, cheesy and sugary and all...original recipe from here

Ingredients

500 gm of high protein
100 gm of sugar
100 gm of butter
11 gm of instant yeast
1/2 tsp bread improver
4 egg yolks
225ml ice water
1/2 tsp salt

For filling:

1/4 cup sugar }
1/4 cup butter} mix both together
1 cup cheddar cheese - grated

Method:

1. Mix all dry ingredients together, except salt.
2. Add water and egg, mix well and knead till smooth;
3. Add butter and salt, mix well till dough is formed;
4. Knead the dough till texture becomes fine;
5. Put the dough in a bowl and cover for an hour.
6. Take the dough out of the bowl and cut the dough into 4 pieces Roll each piece into cylinders and cut into 50 gm pieces;
7. Flatten each piece and using the brush , paint the butter -sugar on the flattened dough. Only brush the middle part;
8. Sprinkle the cheddar cheese in the middle and then seal the dough by folding opposite directions and rolling until a long cylindrical shape is formed;
9. Start forming the ensaymada shapes by crossing the two opposite ends of the dough;
10. Place the dough in a baking tray with wax paper and cover with cloth. Set aside for 45 minutes.
11. Bake the ensaymada for 15 minutes ina preheated oven at 175 C.
12. Once ready, brush the Ensaymada with butter and dipped into sugar. Sprinkle some cheese over the Ensaymada..I did not though ..I forgot!!
13. Serve hot...enjoy.

Blueberry Cream Cheese Bun

BLUEBERRY CREAM CHEESE BUN

Ingredients :
1 egg
Approximately 200g lukewarm water (egg + water = 265g)
120g sugar
6g salt
5g bread softener
500g bread flour/high protein flour
20g milk powder ( pakai whipping cream)
5g bread improver
11g instant dried yeast
80g margarine
Blueberry topping

Cream cheese filling
250g Philadelpia Cream Cheese
60g butter
60g icing sugar
1 egg

Method
Cream all the ingredients for the filling till smooth.

Bread maker method :

1. Into the breadmaker pan, pour in the water and egg. Add sugar, salt and bread softener.

2. Top it with flour, milk powder, bread improver and instant dried yeast.

3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which takes about 1 1/2 hour or so.

4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 49 to 50g each.

5. Form each portion into a ball and arrange on a baking tray. Leave to rise for another 30 minutes or so.

6. Before baking, brush the dough with some fresh milk and use a scissor to cut the top of the dough.

7. Pipe some blueberry filling on top and cream cheese filling.

8. Bake in a pre-heated oven at 180c for 20 to 25 minutes or till golden brown.

9. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Non Breadmaker method:

1. Put everything into the mixer bowl except for the margarine/butter and mix well then put in the butter/margarine. Mix for about 15 minutes.
2. Then transfer dough to another bowl and let it rest for an hour till it rise.
3. Make balls of 50 gm and put in the baking tray.
4. Rest for 30 minutes.
5. Follow breadmaker step 6 to 9.
