BANANA UPSIDE DOWN CAKE



I was going through my FB today and found this recipe from Faten cakes, thanks for the recipe...teruja lak nak buat cake ni, memang sedap sangat pun..lembut, x manis except topping tu manislah..
I also made a minor adjustment to the recipe because I used a square cake pan..

Ingredients:
3 large ripe bananas ( 5 Montel bananas)
250g flour
170g sugar
120g butter
2eggs
150ml milk
100ml yogurt
1tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla
1/8 tsp salt
1 tsp lemon juice

For the caramel: 
100g brown sugar
20g butter
1tsp ground cinnamon

Grease a pan and cover its internal part completely with parchment paper

Prepare the caramel:
Place the butter, brown sugar and cinnamon in a small saucepan. Melt on medium flame, stirring every now and then, until a dark brown caramel is formed.
Spread the caramel in the pan covered with parchment paper, quickly before it solidifies.

Slice the bananas. Mix them with 1 teaspoon lemon juice and place them over the caramel.

In a large bowl, beat the butter with sugar, salt and vanilla till soft.
Add the eggs, one at a time, then the milk and yogurt. Mix for 2 minutes.
Sift the flour with baking powder and baking soda. Add to the mixture and mix using a spatula.


Pour the batter over the banana slices. Level it and bake it 
in a preheated oven at 175C for about 35 minutes. The cake is ready when it has a golden brown colour. 

Cover the pan with a kitchen cloth for 10 minutes before flipping it over onto the serving plate.
