Acar Rebung


Salam, 
Got about 4.5 kg of rebung for the Acar when I went back to Alor Star..Alhamdulillah..dh lama duk tunggu nak balik Alor Star to buy the rebungs..sok nk p bedak kat semua orang2 yg berkenaan. Sedap but this time  my hand got a little overboard on the vinegar..careful when u eat the Acar.

Just to share our stay at this homestay in Alor Star. Very clean and nice. RM120 per nite.
Master bedroom with toilet attached and aircond.
Main lounge with aircond, other rooms with ceiling fan and stand fan
Full kitchen facilities.
Only problem: No WIFI and also no hot water heater..burrrrr  sejukkkk..
Otherwise very pleasant stay.

LASAGNA


Salam all,
 this recipe I copied and paste from Rima of Bisous A Toi 's FB..She said s, someone asked her for a short cut recipe, so she wrote it down on FB. I made it a bit runny but the kids loved it very much..this is a keeper..thanks again Rima.

LASAGNA
2 cans of prego pasta sauce,
 bawang potong dadu..
Fresh tomato potong dadu..
Garlic 4 ulas crushed..
Ground beef 600g..
Olive oil..
Instant lasagna sheets,
1 can mushroom soup,
 1/2 cup double/whipping cream,
chilli flakes, dry parsley n basil, black pepper n salt

Heat olive oil.. Masuk bawang, garlic ..
Add fresh tomatoes, ground beef..
Once pale.. Add two cans of prego n all the herbs..
Simmer for a couple of mins.. Set aside..

Heat mushroom soup n cream.. Stir n set aside..

 In a large casserole dish.. U spread tomato/daging.. Tutup dgn lasagna sheets, spread tomato/daging, mozzarella cheese, tutup dgn lasagna sheets, pour cream base, tutup dgn lasagna sheets n spread top with tomato/daging n mozzarella cheese again..
 Bake on preheated oven 180c for 45min.. Grill top for a further 8mins..

GREEN CHUTNEY

Served with Tandoori Chicken
Recipe for Green Chutney

1 small bunch of cilantro ( daun ketumbar)
1/4 cupMint Leaves 
1 clove garlic
1/4 inch ginger
2 small green chilies, seeded
3 tbp of yoghurt
2 tbsp lemon juice
salt to taste

Wash the cilantro and mint leaves. Drain well.
Blend everything together in a mixer until u get a smooth paste.
Adjust the salt and lemon juice.
Serve immediately.

DOUGHNUTS


Salam...never been successful at making doughnuts..
I saw this recipe on FB and thought I'd give it a try..not wanting to put a lot of hope that it will turn out good but Alhamdulillah..good till the last piece. I know I took it off someone from FB but I cannot find the recipe again ..and I did not jot don the person's name..

Ingredients

500 gm AP Flour
1 tsp baking powder
11 gm Mauripan yeast
3/4 cup caster sugar - dissolved in 1/2 cup of water
1 tsp shortening
2 medium potatoes - boiled and mashed ( I used US potato so slightly bigger - forgot to weight it :( )
3 tbsp margarine/butter - about 50 gm
60 ml water - if not enough can add more

Method:

1. In a bowl mix flour, baking powder and mauripan. Add the mashed potatoes  and mix well.
2. Add the sugared water and mix well.
3. Knead the dough and add water till u get a soft dough.
4. Add shortening and margarine/butter and knead till dough is smooth and soft.
5. Let it proof for 1/2 to 1 hour and doubled in size.
6. Once rise, roll the dough and use a round cutter to cut into rounds and place on a floured tray.
7. Let it rise again for at least 1/2 hour to 1 hour.
8. Heat the oil for frying...meantime take a smaller cutter and cut out the hole for the doughnut and place it into the oil. Make sure oil not to hot or the doughnut will turn dark very fast.  
9. Once fried and drained off oil, roll on a bed of caster sugar./ icing sugar/ dunk into a choc sauce and decorate as desired..

My version - using mixer

I put all the ingredients into the mixer and add the water as the mixer is kneading...oooppss..I do not remember how much water I put in but I guess at least 1/2 cup+ 1/4 cup ( as per recipe) ...u have to use your judgement on how water u put in..

CHICKPEA PASTA WITH SPINACH, SUNDRIED TOMATOES AND WALNUT


Again this salad as part of my NYdinner menu..like this salad because it has chickpeas as one of the ingredients. Made some changes to what I have at home.

Chickpea Pasta with Spinach, Sun Dried Tomatoes, and Walnuts
adapted from Mollie Katzen's Get Cooking
*serves 4-6 



 Ingredients:
-1 can chickpeas
-1/4 cup balsamic vinegar
-1 tsp minced garlic
-3/4 tsp salt
-1/2 tsp dried thyme 
(I omitted, didn't have on hand)
-1/2 tsp dried oregano
-1/4 cup olive oil
-1/2 lb fresh mozzarella (cut into dice)
-pepper (did not have them at home)
-1/2 lb small or medium-sized pasta shells ( did not have these at home)

-1/4 cup grated parmesan cheese (did not have these at home)
-2-4 cups chopped fresh spinach (substiture with local romaine lettuce)
-1/2 bag sun dried tomatoes, chopped ( chopped 6 pieces of the un dried tomatoess)
-3/4 cup toasted walnuts
-1 avocado, chopped 
Ingredients:
1. Rinse chickpeas. Combine vinegar, garlic, salt, thyme, oregano, and olive oil. Whisk to mix. Stir in chickpeas, mozzarella, and lots of pepper. Cover and let sit at room temperature for 30 min-1 hour.
2. Make pasta according to box. Drain and add to chickpea mixture.
3. Toss with parmesan, spinach, sun dried tomatoes, and walnuts. Serve immediately.

**FYI, leftovers are good, but they do dry out some. If you have leftovers, you may want to rejuvenate with a sprinkle of olive oil and balsamic
