BIRTHDAY CELEBRATIONS










HAPPY 24TH BIRTHDAY TO FARAH DINAH - love u very much dear muahhhh...
and to ALIF , Alya's uhmm uhmm HAPPY BIRTHDAY TO U too..

Was slaving away the whole day to make the whole occasion a successful one..thanks to my hubby, the kids and most of all my ever so loyal maid, Munah..

It is not easy to really make all this single-handedly but  Alhamdulillah it all ended all ready for the dinner. My menu for the nite was:
a. Roast Beef
b. Yorkshire Puddings (ended up not making)
c. French Onion Soup
d. Steam Broccoli
e. Caramelized Carrots
f. Dinner Rolls
g. Whipped Potato
h. Buttered Sliced French Loaf 
i. Brown Sauce
j. Green Salad

Dessert
2 Birthday Cakes - yes 2 ( Farah's and Alif's)
Mini pavlovas

What a feast..!!! I love it when we have everyone of my kids and grand kids on the same table having dinner together..how I will miss this when all of them have their own life which is just round the corner..sob sob..
This is what makes me very happy and satisfied all the sweat and hours toiling in the hot kitchen to be in that moment where everyone is around the table..
HAPPY BIRTHDAY FARAH..love u much, my first born :)
and Happy Birthday to Alif too, nice that u can join us..thanks

BREAD DAY...

Helloo...when I woke up this morning and saw a message " Good morning Kak Wan..Rise and shine..wakey.. hehehe a wake up call from my dear friend Mamafami..I was awake earlier in the morning but as soon as everyone is gone, jump back into bed for just a while..but..a while is not a while hehehe..


Anyway, woke up with  some ummphh after reading Mamfami's note and after watching my 'must watch' You-Tube songs n browsing through the net for recipes..I feel like cooking ahaaa..yes..n baking too..This recipe I got from one of the FB friends..OMG..so sorry I forgot to take note of the name of the person who posted it..anyway..this is the recipe..it is a basic bread recipe..a lot different from the others, I think...the recipe is in Malay..uhmm I will put in the translation later.


ROTI ( doh ini blh di pelbagaikan intinya)
600gm tepung roti (high protein)
11gm yis
2 biji telur
200ml susu segar
200ml air suam + 200gm gula (kacau sehingga larut) - I think I used only about 300gm ++ only-dough very soft
50gm shortening
sedikit marjerin

GLAZE:
1 biji kuning telur
3 sudu susu segar
sedikit minyak masak/jagung

* satukan tepung roti, yis dan telur... putar perlahan supaya sebati...
* masukkan susu segar dan air suam yg tlah dicampur dgn gula... putar lg sehingga adunan sekata...
* akhir sekali masukkan shortening dan marjerin kedalam adunan tadi dan terus putar selama 15minit (agak2 adunan ditarik tidak putus dan menjadi sekeping tidak terkoyak)
* uli dan rehatkan adunan supaya naik 2x ganda (lbh kurang 1jam)
* tumbuk2 supaya angin dikeluarkan....
uli dan isi intinya mengikut citarasa anda.... rehatkan doh dlm 1/2jam sebelum dibakar....
* sapukan glaze dan bakar dgn api atas dan bawah 150c slama 18minit...
* apabila dikluarkan dr oven sapu glaze sekali lg supaya lbih berkilat....

I made the following bread with 2 recipes of the above.

a) 10 pieces of sausage buns
b) 12 pieces of burger buns - huge ones..
c) 8 pieces of cheese roll buns - big ones too 







I would say the texture of the bread is soft and since I did not add all the sugar water and also we also take less sugar so the taste is just right. My kids finished everything in almost one seating except the burger buns which are for them to take to have for breakfast tomorrow morning...please give it a try but don't worry the bread is very soft and a bit difficult to handle but then the outcome is simply nice.

APPLE PINEAPPLE MUFFINS



In a hurry to make another batch of muffins..I used the Vanilla Muffin Mix again for these..I simply add apple and pineapple filling on top..it really is heavy that it does not sit on top but sunk into the muffins..in goes with the crumbs too..no matter how it looks..less of looks but still retain the yumminess..imagine apple and pineapple mix..sweet and a tinge of sourness really makes u want more..hahaha..I topped it with crumbs from flour rubbed  with butter and brown sugar but i guess I did not put as much as the ones on the banana muffin as the apple and pineapple is already sweet and so is the muffin mix..I find them a little bit too sweet for me..but don't mind me as I take less sugar..


BANANA CRUMB MUFFINS


Muffins again..this time..Banana..have not eaten bananas for awhile..not because of anything simply forgot to buy them during my numerous visits to TESCO..ardent fan of food shopping..that's me..
I bought the bananas and my hubby came back with bananas too..hahaha suddenly being bombarded with bananas..lucky thing we did not grow tails and swing tree to tree.
I was Google-ing one morning and saw this recipe and it caught my attention..ahhaa..crumb muffins..sounds and looks good too on the Allrecipe site hehehe..anyway, I will just copy and paste the recipe for you to try it but I have also done some adjustment to suit us..."less sugar" lot as we are really a sweet lot :)


Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed ( 1 add another as I was using "Berangan" )
3/4 cup white sugar ( 1 only use 100 gm)
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Directions
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

 Try it and be glad u did....I want to make another batch once I get hold of more bananas..


Blueberry Muffins


The Muffin fever is here for a visit..
This is my own version of the muffins.. uhmmm the laziness has invaded me for the past month or so. Desperately trying to get out of the mood but then I have found comfort in being so..OMG get out, get out...
Facebook also have been quite boring these days, my friends..lovely friends are themselves busy with their own thing and here I am ..finding solace in food again..never ending circle.. :( but I sure love them though..

I bought the ready mix Vanilla Muffin mix from the bakery shop..just to try out how it taste like using a mix. Surprise ..surprise not bad..just a little short cut from the normal steps which when I think about it again not worth it as u still have to add the eggs, melted butter/oil and water/milk..at least I know now in case of emergency..hehehe

I x 450 gm of vanilla muffin mix
2 eggs
300 ml milk/water
115 gm melted butter
Blueberry filling
Makes 16-17 pieces

Preheat oven at 200C for 15 minutes.
Mix all except melted butter and whisk for 2 minutes.
Add melted butter and whisk for 1 minute.
Scoop into the muffin liner and top with a teaspoon of blueberry filling and swirl on the surface of the muffin.
Bake for 20 minutes and once the tester comes out clean it is done.
