NASI KABSAH

Sooo very the sorry gambaq memang lah very kureng...but then again rushing to make it in time for the buka puasa is really a feat..got the resipi from blog Secubit Garam..I love Kak Nor's resipi sebab menjadi..thank you very much.


I ubah skit resepi sebab I buat untuk at least 8 people makan at berbuka and sahur jugak. Anyway,below resepi asal dia and I ubah the quantity to suit my large family. lain kali nak try buat the kabsa kambing lak..


NASI KABSA
resipi : ResipiRaidah

Bahan-bahan:
1 ekor ayam (dibelah 2) @ 1 kg daging kambing + tulang
3 pot/cwn beras basmati ~ cuci dan rendam 30 minit, toskan
4 1/2 pot/cwn @ secukupnya air panas
2 sudu minyak masak
1 sudu minyak sapi
1 batang kayu manis
3 biji buah pelaga
2 biji bunga cengkih
1 biji bawang besar - dipotong dadu
3 ulas bawang putih - dipotong dadu
1 batang karot ~ diparut
1 biji buah tomato - dikisar
2 sudu tomato puri
1/2 sudu kecil pewarna kuning (saffron)
1 sudu besar rempah kabsa **
1 biji lemon hitam/kering - dicucuk bahagian tengahnya ~ k.nor tak letak
1 biji lada bengala merah (red capsicum) ~ dipotong dadu
1 sudu kecil lada hitam biji/serbuk
2 biji cili merah ~ jgn potong
1/4 cawan kismis
Garam secukup rasa dan gula (kalau suka)

Cara penyediaan:
1. Panaskan minyak dan minyak sapi. Tumiskan kayu manis, bunga cengkih, bunga lawang dan buah pelaga, bawang putih dan besar dan goreng sehingga wangi.
2. Masukkan buah tomato, tomato puree, lemon, saffron dan rempah kabsa dan goreng sebentar.
3. Kemudian masukkan ayam dan masak sehingga ayam masak. Tambahkan garam secukup rasa dan juga gula.
4. Masukkan karot, capsicum, cili merah, kismis dan beras. Masukkan air panas secukupnya dan masaklah nasi sehingga masak.
5. Kacau/gembur nasi bila nasi betul2 masak, selepas 30 minit supaya nasi tidak hancur.

HOMEMADE REMPAH KABSA


Bahan - bahan:
1 sudu makan bunga cengkih **
1 sudu makan lada hitam **
1 sudu makan jintan manis **
1 sudu makan jintan putih **
2 sudu makan biji ketumbar **
1 sudu makan buah pelaga **
1 sudu buah pelaga hitam (black cardamom pods) **
1 sudu makan serbuk cili
1 sudu teh kunyit

Cara penyediaan:

1. Goreng tanpa minyak bahan2 yg bertanda ** sehingga naik bau dan angkat.
2. Kemudian kisar semua bahan sehingga hancur.
3. Simpan rempah yg telah dikisar didalam bekas yg kedap udara.

Jika tiada buah pelaga hitam, boleh gantikan dgn buah pelaga biasa. Serbuk rempah ini boleh juga digunakan pada semua masakan ala arab termasuklah ayam dan daging.


Nasi ini di gabungkan dengan sos nya. Kami sekeluarga jugak suka makan nasi berkuah sikit. Nasi Arab selalu kan kering aja jadi saya masak Dalca Sayur seperti di bawah.


Resipi sos nya:


1 biji tomato ~ hiris 
5 biji cili besar hijau (nk pedas tmbh lagi) ~ hiris

1 tangkai batang ketumbar ~ dihiris halus 

Garam 

Gula 

Perahan lemon.


Cara penyediaan:

~ Kisar semua bahan dengan perahan air lemon, sekejap sahaja. Jangan sampai terlalu hancur.

**I hancur kan semua hehehe x dengar cakap..tapi I tambah sebiji tomato yg di dadu kecil dan daun ketumbar dihiris halus.

Buka puasa on 29.7.2012

After making a boo boo on the menu for Saurday nite, I asked hubby whether we can go for Arab food at The Half Moon, nearby his office and also near to Alya's Uni..she has to go back to college after berbuka..
But then, we decided that it will be too troublesome to go there so I ended up making the Arab food at home. Browsing through the internet and I found the recipe from Secubit Garam's blog..so sedap..
but her condiments was just the sauce..we love having gravy with our rice so I made vegetable dalca as an accompaniment to it.

a) Nasi Kabsa Ayam
b) Sos nya
c) Dalca sayur
d) Sagu with kelapa ( yesterday's - buat skit dia jadi byk..so next time kena half kan resipe)
e) Lompang - balance of yesterday's
f) Kuih pelita
g) Putu pirings ( bought)
h) grapes
i) Blackcurrant drink
j) Air sirap bandung

Setelah lama gagal and kecewa..at last...jadi but still kena praktis lagi lah kot..happy nyer bila tgk ada lubang kat tgh lompang i..hehehe..but then kena bancuh and tuang betui2..rasa macam anxious sangat nk make sure cawan tu x sejuk and nk aim tuang dalam mangkok kecik tu take skills ...

Bahan A
2 cawan tepung beras
1/2 sudu kecil kapur [bancuh dan tapis]
Kelapa muda diparut gaul dgn sikit garam - untuk hiasan

Bahan B [masak sehingga mendideh dan tapiskan]
1/2 cawan gula biasa
1/2 cawan gula merah
4 cawan air

Cara:
1. Bancuhkan tepung dgn air kapur yg ditapis.
2. Tuangkan air gula yang suam dan kacau rata. Biaq for at least satu jam ( ni petua my cousin)
3. Panaskan cawan kecil dalam kukusan.
4. Tapiskan adunan kedalan teko untuk memudahkan dituangkan kedlam acuan kecil.
5. Kukuskan kueh selama 20 minit.
6. Sejukkan kueh.
7. Cungkilkan perlahan dan masukkan kelapa parut .

Buka Puasa 28.7.2012


This was Saturday 21 st July's buka puasa...we had a visitor joining us for buka ie. Alya's friend, Alif..uhmmm look at Zaraa's facial description...now she understands that posing for a camera is something exciting...she'd make her normal hand gesture..requesting to look at the picture on the camera..

We had ala kampung fusion food..misguided I might say..is today..when u read below then u would realise the dishes do not compliment each other. What was I thinking about...OMG, my menu planning is down the drain today..

a) Patin masak tempoyak ( 2nd try this week)
b) Sayur asam ubi keladi;
c) Mango kerabu;
d) Tempe and tauhu goreng;
e) Ayamas chicken wing;
f) Sagu with kelapa;
g) Lompang;
h) Blotok;
i) Tepung pelita ( Farah bought these)

Ikan Patin masak tempoyak


Today something special..first try at making any tempoyak dish.. Googled this recipe..there are so many on the net but I chose this one..Ikan patin masak tempoyak.. My pix is kinda blurry from the hp so sorry if you think nothing of the dish but it is simply amazing..love it and thanks to whoever it is that put it up on the net..

Farah, my eldest daughter was going on...eeeee tempoyak?? sapa nak makan??? ( I am from Kedah and my mum never advocate tempoyak in any of her cooking so I never really expose my kids to it..my fault ..really)...surprise..surprise..she was the last to leave the table..cannot get enough of the dish..hehehe first time the kids add more and more rice to their plate..

Here is the recipe if you want to try it:

Bahan-bahan utama
Seekor ikan patin (eloknya ikan patin sangkar) ikan disiang dan diperapkan dengan asam jawa dan limau nipis untuk hilangkan hanyir selama kira-kira 1 jam.
2 ulas kunyit hidup (bukan serbuk kunyit)
6 biji bawang kecil.
20 biji cili padi (bergantung pada suka pedas mana ya) ( I put 10 of the vietnamese red chillies)
2 senduk tempoyak
1 ikat daun kesum
2 ikat bunga kantan ( yang guna untuk masak laksa tu)
sedikit asam keping
air
garam secukup rasa
gula (jika perlu dan jika suka)

Cara memasaknya
Kunyit hidup, bawang kecil dan cili padi ditumbuk halus dan digaulkan dengan tempoyak tadi. Masukkan ke dalam periuk yang bersama air. Lepas tu kacau sehingga rasa dan masukkan asam keping. Letak di atas api dan biarkan selama kira-kira 3 minit.  Masukkan ikan yang dibersihkan tadi, masukkan bunga kantan dan daun kesum.
Masukkan garam secukup rasa, adjustlah kalau takut pedas dengan mengurangkan jumlah cili tadi. Kalau terlajak, adjust dengan meletakkan sedikit gula ok…

Buka Puasa 24.7.2012

Yes..it is already the 4th day of Ramadhan..getting  the hang of time management..when to start cooking and making the kuihs etc..I don't believe in buying things from the Pasar Ramadhan simply because it will cost more as I have a full table of 12 including the baby..so it is best to make it yourself and more satisfying, I think..

Menu for the day was:

a) Ayam Ala Kassim ( kids favorite)
b) Ikan patin masak tempoyak
c) Terung masak tempura
d) Sayur goreng pedas
e) Ulam2 and sambal belacan
f)Buah melaka
g) Cucoq  bawang with jagung 
h) Soya Bean
i) Sirap Bandung 











Apam Nasi aka Apam Ekonomi


Dah lama nk try this apam but never got round to it..anyway, pleasantly surprised that it actually turn out good.  Klu u go to pasar Ramadhan, u only get those yg mekar tu..I love those.This apam does not have that mount on top though..but good and soft. Very easy..cannot remember where I got it from..thanks to whoever u are..


2 cwan nasi 
1 1/2 cwan gula
3 cwan air
1 peket yis
3 cwantpung beras
1 cwan tpung gandum 

Cara :

a) blend nasi,gula,air n yis.tapis n campo dgn tepung.
b) perap 2_3 jam.
c) warna kan sesuka ati n tuang dlm acuan.
d) kukus 15 minit.
e) hidang dgn kelapa parut

BUKA PUASA -23.7.2012

Berbuka today was really another feat again..food galore....hehehe eating is a favorite pastime for us..no wonder you might say ..who cares as long as you enjoy them and in good company ;)

Anyway, menu for today was:

a) Sambal tempe with ikan bilis and kacang 
b) Sayur Keladi ( aiseyyy forgot to take the pix :()
c) Ikan siakap goreng with kicap
d) Kerabu kacang botol and taugeh
e) Kari ikan selar 
f) Ulam2 and sambal belacan
g) Popiah goring
h) Apam
i) Lemon mint lemonade
j) Iced tea
k) Chrysanthemum Tea

Girls Day out on 20 July 2012


Woke up in the morning thinking that it was a nice day to stay in and later to go and do some shopping for the Ramadhan...got a call from one of girlfriends and we agreed that Friday is not a good day to go to KL especially nearing to Ramadhan and everybody is flocking to the city for their last minute shopping...until I got a call from Nord..I definitely cannot turn her down now, can I??? So I picked her up in Kota Damansara and off we go ...surprise ..surprise..no jam..hehehe 

So it was a lovely day after all...meeting up with the girls are usually laced with lots of chatter, laughs usually at ourselves,good food..and it ended quite soon but alas every one has got to go back to work and our commitments.

Thanks to Datin Shamsiah for sponsoring the lunch at Royal Lake Club, thanks to the rest - Rosnah, Mastura, Noralina and Nord for attending and Milah for making the arrangements with Datin ..





RAMADHAN DAY 1 AND 2

Salam Ramadhan semua...
Kita dh pun masuk hari ke 2 Ramadhan..alangkah cepat nya masa berlalu.
Hari pertama Ramadhan agak kelam kabut skit sebab baru nk adjust rutin baru..hehehe..penat jugak ek bukan apa sibuk p dan balik kedai..rasanya bulan Ramadhan ni makn bertambah banyak ..but yang jelas nya semua nya dibuat sendiri buat sementara waktu ni lah..

Hari pertama tu menu nya ialah 

a. Masak lemak udang
b. Pecal 
c. Cencaru belah belakang
d. Ikan masin
e. Air kacang soya dengan cincau
f. Air limau madu
g. Karipap
h. Bubur pulut hitam

Bolih tahan banyak jugak tu..kan pecal dengan rebusan sayur taugeh, kangkong dan kacang panjang, taufu goreng, tempe goreng dan telor rebus...

Sahur pun makan lebihan Iftar dan kita2 ni suka makan breakfast menu masa sahur except that anak2 nak makan nasi so we have both on the table..

2 Ramadhan ni more organised/ tersusun skit..x kalut sangat kecuali arini pergi hantaq anak balik Uni so singgah kat Pasar Taman Tun..uhmmm g beli ulam2, jeruk maman, pisang tanduk, batang keladi... aiseyyy semua nk di beli..kena tahan diri ..lain kali mai lagi naaa...

So menu for  2 Ramadhan :

a. Ayam masak cili - my youngest punya favorite klu x dia kurang makan..
b. Jeruk Maman
c. Masak lemak putih sayur dan soo hon
d. Ikan masin
e. Cencaru bakar dan air asam
f. Ulam raja, timun dan pucuk janggus + sambal belacan
g. Lemak udang ( yesterdays)
h. Air lemon mint
i. Air sirap ngan cincau
j. Agar2
k. Cucuk Badak

One of those days...


My two grand daughters, Sarah and Zaraa..both the apple of everyone's eyes..especially in our household..
Sarah has grown to be a pretty girl, more girlish, idolise the Disney Princess and everything pink...but little sista, Zaraa..is more grrrrr...see the face below..


Trying very hard to catch up to big sister..she is making progress in walking..but is still not saying many words..event though she is almost 14 months old..

Anyway, kids are kids..and are adorable...

Banana Chocolate Chip Muffin

It has been a while since I post in this blog. Have been very lazy and fallen into a deep rut of self pity, I suppose..uhmmm..I cannnot seem to find myself for a while ..I guess menopause is setting in..After a while u come to a realisation that you are not alone..Anyway, these were made recently but I still have that lazy mood hehehe..hence the muffin mix.


I pack of 500 gm of muffin mix
4 eggs size B
135 gm oil
130 gm water
3 bananas - mashed
1 tsp baking soda ( in addition )
a handful of choc chips


Put everything into a bowl and whisk it for 2 minutes until well mixed.
Spoon into a cupcake liner and just put a few choc chips on top of the muffins or you can also mix together into the muffin mix.
Bake at 180 C for 25 minutes and put on the rack to cool.
Enjoy !!!
