DRIED FRIED STUFFED TOFU

Best ever recipe from Patyskitchen..my hubby and kids loved it very much. It is a keeper this one. Thanks for the recipe,  Patyskitchen. I will be making it again next week.

1 packet dried tofu / 1 packet tofu kering
250 g shrimps – chopped / 250 udang hidup dicincang
1 onion chopped / 1biji bawang besar dicincang
3 clove garlic – chopped / 3 ulas bawang putih dicincang
1 red chili- chopped / 1 biji cili merah dicincang
3 strig spring onions chopped / 3 tangkai daun bawang dicincang
1 tbsp oyster sauce / 1 sdb sos tiram
Salts and sugar to taste / garam dan gula secukup rasa
 ( 1 egg - beaten )

First, prepare the tofu.  Place the tofu in a colander and pour hot water over the top.  I think this is an important step because it refreshes the tofu and gets rid of excess oil.
Slice the tofu on the diagonal then make a small incision in the center of the tofu.  Don’t make this too deep; otherwise, you will tear the tofu.  Handle the tofu gently.
In a small bowl, add the chopped prawn, chopped green onions, chopped garlic, oyster sauce and the egg white.  Mix well.
To stuff tofu, sometimes they remove some of the white part of the tofu to make more space for the stuffing mix.  However, I find this unnecessary and a waste.  Gently, open the slit and stuff with the prawn mix.
Heat a frying pan and when hot add cooking oil, such as canola or vegetable.
Place the stuffed side down in the pan to cook first.  Cover the pan and lower the heat to medium low.  Cook for a couple minutes.

** I dipped the stuffed tofu into the beaten egg first and then fried it so that the stuffing will not come out whilst frying.
